SPINACH SLAW

Spinach Slaw image

Served with rolls or homemade bread, this slaw's hearty enough to be a main course, it's also a great side dish-my family especially likes it accompanying steak and corn on the cob. It tastes good with ribs besides. Even people who don't enjoy cabbage like it prepared this way. (I know...my husband, Glen, is one of them!) The honey's sweetness helps with that. Glen works for our local police department, and I work for the fire department. We have a pair of sons, 19 and 6, and a daughter who's 4.

Coleslaw With Grapes and Spinach image

Different version of coleslaw I came up with because my husband HATES carrots. Everybody loved it! Great both crunchy or soft. Add more grapes to cut the onion if the onion is really strong. You'll be amazed!

Tips:

  • Choose fresh, crisp vegetables: The fresher the vegetables, the better the slaw will be. Look for vibrant, deeply colored cabbage and spinach with no signs of wilting or bruising.
  • Use a variety of vegetables: Don't just stick to cabbage and spinach. Try adding other vegetables like shredded carrots, bell peppers, onions, or broccoli. This will add flavor and texture to your slaw.
  • Make a flavorful dressing: The dressing is what really brings the slaw together. Use a combination of vinegar, oil, sugar, and spices to create a dressing that is both tangy and sweet. You can also add other ingredients like mayonnaise, sour cream, or yogurt for a creamier dressing.
  • Chill the slaw before serving: This will help the flavors to meld and the slaw to become more crisp.

Conclusion:

Spinach and cabbage slaw is a healthy, refreshing, and versatile dish that can be enjoyed as a side dish or a main course. It's a great way to get your daily dose of vegetables, and it's also a delicious and affordable meal. So next time you're looking for a quick and easy salad to make, give spinach and cabbage slaw a try.
