SQUASH DRESSING

Squash Dressing image

I 'hate' squash and I 'hate' cornbread dressing...but this is one of my favorite dishes.

Provided by Pitxitxita

Categories     Side Dish     Vegetables     Squash     Summer Squash

Time 1h45m

Yield 8

Number Of Ingredients 10

2 ½ pounds yellow squash, cut into chunks
1 (9x9 inch) pan prepared cornbread
2 tablespoons butter
1 large onion, chopped
1 large green bell pepper, chopped
3 large stalks celery, chopped
2 (10.5 ounce) cans cream of chicken soup
4 eggs
salt and ground black pepper to taste
1 (1 pound) package Mexican-style processed cheese food (such as Mexican Velveeta®), cut into 1-inch cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 15x17-inch baking dish.
  • Place the squash into a saucepan with about 1 cup of water, cover, and cook over medium-low heat until soft, about 15 minutes; drain, saving about 3/4 cup of the squash cooking liquid, and set aside. Break the cornbread apart into chunks, place into a large bowl, and chop up with a dinner knife until crumbled.
  • Melt the butter in a skillet over medium heat, and cook the onion, green bell pepper, and celery until soft, about 10 minutes, stirring often. Mix the cream of chicken soup and eggs together in a bowl; mix in the pan-fried vegetables, and season to taste with salt and black pepper. Stir the soup mixture into the cornbread. Gently stir in the cooked squash, and lightly mix in enough of the reserved squash cooking liquid to give the dressing the consistency of cooked oatmeal (slightly soupy). Stir in the cubed cheese food. Turn the dressing into the prepared baking dish.
  • Bake in the preheated oven until set and lightly browned, about 1 hour; let stand 10 to 15 minutes before serving.

WARM BUTTERNUT SQUASH AND CHICKPEA SALAD WITH TAHINI DRESSING

WARM BUTTERNUT SQUASH AND CHICKPEA SALAD WITH TAHINI DRESSING image

Categories     Salad     Side     Bake     Vegetarian     Wheat/Gluten-Free     Squash     Healthy     Vegan

Yield 4 Servings

Number Of Ingredients 15

For salad:
1 medium butternut squash (about 2 to 2 1/2 pounds), peeled, seeded, and cut into 1 1/2-inch pieces
1 medium garlic clove, minced or pressed
1/2 teaspoons ground allspice (I skip this)
2 tablespoons olive oil
Salt
One 15-ounce can chickpeas, drained and rinsed (1 1/2 cups)
1/4 of a medium red onion, finely chopped
1/4 cup coarsely chopped fresh cilantro or parsley
For tahini dressing:
1 medium garlic clove, finely minced with a pinch of salt
1/4 cup lemon juice
3 tablespoons well-stirred tahini
2 tablespoons water
2 tablespoons olive oil, plus more to taste

Steps:

  • In a large bowl, combine the butternut squash, garlic, allspice, olive oil, and a few pinches of salt. Toss the squash pieces until evenly coated. Roast them on a baking sheet for 25 minutes, or until soft. Remove from the oven and cool. Meanwhile, make the tahini dressing: In a small bowl, whisk together the garlic and lemon juice. Add the tahini, and whisk to blend. Add the water and olive oil, whisk well, and taste for seasoning. The sauce should have plenty of nutty tahini flavor, but also a little kick of lemon. You will probably need to add more water to thin it out. To assemble the salad, combine the squash, chickpeas, onion, and cilantro or parsley in a mixing bowl. Either add the tahini dressing to taste, and toss carefully, or you could serve the salad with the dressing on the side. Serve immediately.

SOUTHERN CORNBREAD DRESSING IN ACORN SQUASH

Southern Cornbread Dressing in Acorn Squash image

Traditionally, southern dressing or stuffing is baked alongside a hen or turkey. This is pretty much the same dressing recipe but it's baked inside acorn squash. The squash keeps the dressing from drying out and provides another side dish.

Provided by SusieQusie

Categories     Onions

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 12

2 tablespoons butter
1 cup onion, chopped
1 cup celery, chopped
2 cups chicken broth (may need more or less)
1 1/2 teaspoons dried sage
1 teaspoon dried thyme
1/4 teaspoon black pepper, to taste (I like mine peppery)
6 slices stale bread, cubed
4 cups cornbread, crumbled
2 whole eggs, beaten
4 small acorn squash (small size, about 4 pounds total)
4 tablespoons butter, melted

Steps:

  • Preheat oven to 400°F.
  • In a skillet, melt 2 tablespoons butter on medium heat and cook onion and celery for 3 to 4 minutes until tender, stirring occasionally.
  • Add chicken broth, sage, thyme and pepper to taste and cook over medium heat for 1 minute.
  • In a large bowl, combine bread cubes and cornbread. Pour broth/vegetable mixture over all and stir to combine. If the mixture is dry or crumbly looking, add broth until it will hold together.
  • Stir in the eggs. (Stirring in the eggs last prevents the hot broth from scrambling them.).
  • Cut acorn squash in half and scoop out the seeds. Cut a small slice off the sides, so the squash will lay flat in the baking dish.
  • Generously brush insides of squash with melted butter.
  • Spoon a heaping 1/2 cup of the stuffing mixture in each squash half and place in a large shallow baking dish. Drizzle on any remaining melted butter.
  • Cover tightly with foil and bake for 1 hour or until squash is tender and dressing is warmed through. If desired, remove foil during the last 10 minutes to brown up the top.

SUMMER SQUASH DRESSING

Summer Squash Dressing image

I serve with recipe#435267, roasted asparagus, coleslaw, and recipe#462312. Have made ahead and also have frozen prior to baking. I prefer baking in shallow layer so it is less soggy. I plan ahead by making 9 inch pan of cornbread day before and then using the leftovers for this. Melt butter in container big enough to hold other ingredients. I have subbed in zucchini also for this.

Warm Butternut Squash Salad with Pomegranate Dressing Recipe - (4.5/5) image

Provided by davidv

Number Of Ingredients 18

Salad:
2 Tbsp olive oil
1 medium red onion, roughly chopped
1 fennel bulb, roughly chopped
1 lb butternut squash, cubed into 1/2" pieces and cooked until fork-tender
3/4 tsp salt
1/2 tsp ground black pepper
1 (5-oz) package baby arugula
1/2 pomegranate (seeds left whole)
1 (3-oz) bag pork cracklings, broken into small pieces
Dressing:
1/8 cup extra virgin olive oil
1/4 cup vegetable oil
4 tbsp red wine vinegar
1 tbsp honey
1/2 tsp ground black pepper
1/4 tsp salt
1/2 pomegranate (juice & seeds)

Steps:

  • Salad: Heat the olive oil over medium-high heat in a large skillet. Add the onion and the fennel and cook for 5 minutes, stirring occasionally. Add the cooked butternut squash, salt, and pepper and sauté, stirring occasionally, for another 6 minutes. Remove the mixture from the heat and place into a medium-size mixing bowl. Add 1/2 of the dressing, toss, and set aside. Dressing: Place all ingredients into a small blender or food processor and process until fully combined. Strain the mixture through a fine mesh colander. Store the dressing in the refrigerator until needed. To assemble the salad, place the arugula in a large mixing bowl. Add 1/2 of the dressing and toss. Add the warm vegetables and toss again. Sprinkle the pomegranate seeds and pork cracklings over the salad and serve immediately.

Tips for Making the Best Squash Dressing:

- Choose the right squash: For the best flavor, use a sweet and flavorful squash, such as butternut squash or acorn squash. - Roast the squash: Roasting the squash brings out its natural sweetness and caramelizes the edges. If you don't have time to roast the squash, you can also use steamed or boiled squash. - Use a good-quality olive oil: The olive oil is the base of the dressing, so make sure to use a good-quality extra virgin olive oil. - Add some acidity: A little bit of acidity helps to balance out the sweetness of the squash. You can use lemon juice, vinegar, or even yogurt. - Season to taste: Add salt, pepper, and other seasonings to taste. You can also add some fresh herbs, such as thyme or rosemary. - Let the dressing sit: Letting the dressing sit for a few minutes allows the flavors to meld together. This will make the dressing even more delicious.

Conclusion:

Squash dressing is a delicious and versatile condiment that can be used on salads, sandwiches, and even as a marinade. It's a great way to use up leftover squash, and it's also a healthy and nutritious addition to your diet. With a few simple ingredients and a little bit of time, you can make a delicious squash dressing that your whole family will love.
