2 medium acorn squash (about 2 pounds each)
3/4 teaspoon salt, divided
1/4 teaspoon pepper, divided
1/4 cup plus 2 tablespoons butter, divided
1/2 cup packed brown sugar
2 tablespoons water
1 pound fresh green beans, cut into 1-1/2-inch pieces
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary, crushed

Steps:

  • Cut squash into 1 in. slices; discard seeds and ends. Arrange slices in a single layer in a greased 15x10x1-in. baking pan. Sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Cover and bake at 350° for 40 minutes., Meanwhile, in a saucepan, combine 1/4 cup butter, brown sugar and water; bring to a boil. Brush over the squash. 1 large onion, chopped
2 large garlic cloves, minced
1 pound fresh green beans, trimmed
3/4 pound yellow squash (3 medium squash), sliced
1 (14-ounce) can chopped tomatoes, or 1 1/2 cups peeled, chopped tomatoes
Salt and freshly ground pepper to taste
1/4 cup chopped fresh mint, parsley or dill
1 to 2 tablespoons fresh lemon juice (optional)

Steps:

  • Heat 2 tablespoons of the olive oil in a wide, covered skillet or Dutch oven over medium heat, and add the onion. Cook, stirring, until tender and translucent, five to eight minutes. 4 lb butternut squash, halved lengthwise, seeded, and diagonally cut crosswise into 1 1/2-inch-thick triangular pieces
3 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1 stick (1/2 cup) plus 1 tablespoon unsalted butter, stick cut into tablespoon pieces and other tablespoon melted
1 1/2 tablespoons Sherry vinegar
1 1/2 tablespoons soy sauce

2 teaspoons tamari
1 teaspoon sake
2 teaspoons honey
1 1/2 teaspoons grated peeled fresh gingerroot (I like more)
3/4 lb butternut squash, peeled and cut into 1 inch cubes
1/4 teaspoon salt (I dont use, the tamari does it for me)
1/3 lb fresh green beans
2 teaspoons water
1 teaspoon cornstarch, dissolved in the water

Steps:

  • In a saucepan bring 1 cup of the dashi, 1 T.
  • of the tamari, the sake, 1 t.
  • of the homey and the ginger to a simmer.
  • Add squash and simmer for 8 minute.
  • Remove with a slotted spoon.
  • Add remaining dashi, the salt, and 1/2 t.
  • oc honey to the broth and return to a simmer.
  • Add the beans and simmer, covered until barely tender.
  • Remove beans.
  • To the broth add the remaining tamari and the honey, but I would taste before adding the honey as this could get quite sweet.
  • Stir in the cornstarch/water and thicken.

1/2 butternut squash or 1 acorn squash, about a pound (butternut squash is the easiest to peel and cut into finger sized sticks)
2 cups green beans, about 8 ounces
1 tablespoon vegetable oil
1 tablespoon butter
2 tablespoons maple syrup
2 teaspoons soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup toasted walnuts, perferably whole halfs

Steps:

  • Peel and cut squash into 3 x 1/2 x 1/2 inch strips to make about 5 cups, set aside.
  • In a large saucepan of boiling salted water, blanch the green beans until tender crisp, about 3 to 6 minutes.
