Yield Makes 6 servings

Number Of Ingredients 8

1 1/2 cups old-fashioned oats
1/4 cup almonds, coarsely chopped
1/4 cup plus 3 tablespoons pure maple syrup
1 1/2 teaspoons unsalted butter
1/3 cup raisins
3 cups sliced hulled strawberries (about 1 1/2 one-pint baskets)
3 cups thinly sliced pitted peeled peaches (about 6 medium)
Nonfat vanilla frozen yogurt (optional)

Steps:

  • Preheat oven to 350°F. Mix oats and almonds in 13x9x2-inch baking pan. Combine 1/4 cup maple syrup and butter in heavy small saucepan. Bring to boil. Pour maple syrup mixture over oat mixture; stir to blend well. Bake 10 minutes, stirring occasionally. Add raisins to oat mixture; stir to blend. Bake until mixture is golden and crisp, stirring occasionally, about 8 minutes longer. Cool granola completely in pan. (Can be prepared 1 week ahead. Store in airtight container at room temperature.)
  • Gently toss strawberries, peaches and remaining 3 tablespoons maple syrup in large bowl to blend. Divide fruit mixture among 6 parfait glasses. Sprinkle each parfait with granola, dividing equally. Top each with scoop of frozen yogurt, if desired, and serve.

Tips:

  • For the parfaits, use ripe and juicy strawberries and peaches.
  • If you don't have maple syrup, you can substitute honey or agave nectar.
  • To make the granola, use old-fashioned oats for a heartier texture.
  • You can add your favorite nuts, seeds, or dried fruits to the granola.
  • Be sure to toast the granola until it is golden brown and fragrant.
  • To assemble the parfaits, layer the yogurt, fruit, and granola in parfait glasses or jars.
  • You can also top the parfaits with a drizzle of maple syrup or honey.

Conclusion:

Strawberry and peach parfaits with maple granola are a delicious and refreshing summer treat. They are perfect for breakfast, lunch, or a snack. The parfaits are also a great way to use up ripe fruit. The granola is a healthy and crunchy addition to the parfaits. It is also a great snack on its own.
