9 whole reduced-fat cinnamon graham crackers
1-3/4 cups cold fat-free milk
1 package (1 ounce) sugar-free instant cheesecake or vanilla pudding mix
1 large firm banana, sliced
1/2 teaspoon lemon juice
2 cups sliced fresh strawberries, divided
2-1/2 cups reduced-fat whipped topping, divided
Mint sprigs, optional

Steps:

  • Line the bottom of a 9-in. square pan with 4-1/2 graham crackers; set aside., In a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Place banana slices in another small bowl; toss with lemon juice. Stir bananas and 1 cup strawberries into the pudding. 15 ounces frozen sweetened sliced strawberries (about 2 cups), thawed and drained, syrup reserved
1 (13.9-ounce) package banana quick bread mix
2 eggs
3 tablespoons canola oil
1 1/4 cups milk
1 (8-ounce) container mixed berry yogurt
1 cup plain yogurt

Steps:

  • Preheat oven to 375 degrees F.
  • Spray bottom of an 8 by 4 by 3-inch loaf pan with nonstick spray. Stir 1 1/4 cups strawberries, banana bread mix, eggs, oil and milk in a large bowl to blend. Transfer batter to prepared pan. Bake until a toothpick inserted into center of bread comes out clean, about 50 minutes. Cool 15 minutes in pan. Remove bread from pan.
  • Meanwhile, stir remaining 3/4 cup strawberries (with syrup), berry yogurt, and plain yogurt in medium bowl to blend. Cover and refrigerate until ready to serve.

5 cups milk
8 large egg yolks
4 tablespoons unsalted butter, cut into pieces
4 large bananas
2 1/2 cups heavy cream
2 tablespoons confectioners' sugar
72 wafer-style vanilla cookies, such as Nilla Wafers (from one 11-ounce box)
1 pound strawberries (4 cups), hulled and cut into 1/4-inch slices, plus more, whole, for serving

Steps:

  • Place a fine-mesh sieve over a medium bowl. In a medium saucepan, off heat, whisk together granulated sugar, cornstarch, salt, and vanilla beans and pod. Gradually whisk in milk until cornstarch has dissolved; whisk in yolks.
  • Cook over medium, whisking constantly, until the first large bubble forms and sputters. Reduce heat to low; cook, whisking constantly, 1 minute. Remove from heat and stir in butter until melted; immediately pour through sieve into bowl. When I realized the graham crackers would make nice even layers a snap, the idea to make it in an 8x8-inch pan came quickly. It tastes amazing, and the crackers soften quicker than the wafers do. The addition of the Dream Whip® topping mix makes this very creamy and the even layering means you taste all three elements in every bite!

3 ½ cups cold 2% milk
2 (3.5 ounce) packages instant French vanilla pudding mix
1 (1.3 ounce) envelope dry whipped topping mix (such as Dream Whip®)
½ (14.4 ounce) package graham crackers, or more as needed
2 large bananas, sliced, or more to taste

Steps:
