STUFFED MUSHROOMS WITH LEEKS, BLUE CHEESE AND WALNUTS.
A really simple and tasty dish that is so versatile and open to so many interpretations. Great for a starter, side or snack dish, or why not stick it into a bun for a veggie burger! I've used toasted pine nuts, but hazelnuts would be good too. Stilton and Cambezola cheese work really well too and Cheddar is an obvious choice if you don't do blue cheese. I bet fresh mozzarella would be great too. Chopped bacon can also be added to the leek for another variation.

Steps:
- Preheat the oven to 350 degrees F and line a baking sheet with Reynolds Wrap® Aluminum Foil. Spray or grease the foil. Wipe the mushrooms clean with a damp paper towel and remove the stems. Place the mushrooms gill side up on the baking sheet and sprinkle with a bit of salt. Bake the mushrooms for 10 minutes to just soften.
- Finely chop the celery, leeks and garlic. In a saucepan over medium heat, warm 1 tablespoon of the olive oil. Once warmed, add the leek mixture and sea salt. Saute until softened, about 5-6 minutes.
- In another bowl, combine the pecans, panko breadcrumbs, Parmesan, beans, pepper flakes and black pepper. Stir to mix, mashing the beans a bit with the back of a spoon. Add the leek mixture, remaining tablespoon oil, and stir again. The filling mixture can be made an hour in advance.
- Spoon the vegetable mix into the mushroom caps, filling them generously. Sprinkle the tops with a little extra Parmesan and the grated fontina. Bake the mushrooms for another 10 minutes or until barely golden on top. Sprinkle with parsley and serve warm.

Tips:
- Choose the right mushrooms: Portobello or cremini mushrooms are best for stuffing because they have a large cavity and meaty texture.
- Clean the mushrooms thoroughly: Use a damp paper towel to wipe away any dirt or debris from the mushrooms.
- Remove the stems: Use a spoon to carefully remove the stems from the mushrooms. Save the stems for another recipe, such as a soup or sauce.
- Cook the mushrooms briefly: Sauté the mushrooms in a little butter or oil until they are softened but still have a little bite to them.
- Don't overstuff the mushrooms: Use a light hand when stuffing the mushrooms so that they don't burst.
- Bake the mushrooms until they are heated through: The mushrooms should be cooked until they are tender and the filling is bubbly.
- Garnish the mushrooms before serving: Sprinkle the mushrooms with chopped parsley, chives, or thyme before serving.
Conclusion:
Stuffed mushrooms are a delicious and versatile appetizer or main course. They can be made with a variety of fillings, so you can easily customize them to your own taste. With a little planning and effort, you can create a stunning and flavorful dish that will impress your guests.
