- Prepare the crust as indicated and allow it to harden in the refrigerator. In a saucepan on no heat, stir together the gelatin with the water. Allow this to site while you work.
- Whisk together the condensed milk, cinnamon, allspice, ginger, and nutmeg in a medium mixing bowl. Set this aside. Place the saucepan with the gelatin on low heat and stir until the gelatin is dissolved. It can take up to a few minutes for the gelatin to get fully dissolved. Once it has dissolved you can stir in the condensed milk mixture from the medium mixing bowl and continue stirring until thickened (five to six minutes).
- Remove the saucepan from the heat and stir in the pumpkin puree and vanilla extract. Then transfer the ingredients to the prepared pie crust. Cover and refrigerate until firm (about five hours). Serve with the whipped topping or topping of your choice.

THANKSGIVING PUMPKIN CHIFFON PIE (GELATIN FREE)
This is a heavily modified version of my grandmothers' recipe that I've made vegetarian and dairy free. She made it every Thanksgiving. We never had the regular kind and there is no substitution for this amazing pie. I have made this healthier than the original but I will post their original recipe as well. You cannot tell the difference! Try it with a gingersnap or pecan crust. I usually add a 1/2 tsp. of vanilla but it's not necessary. I use soy milk but you can use almond milk, oat milk or dairy milk. Wonderful with a little fresh whipped cream but really doesn't need a thing. This is also good for Christmas.

- *If using fresh pumpkin you will need a 1 - 1.5 lb. pie pumpkin. Peel and seed pumpkin. Cut in chunks and steam for about 20-30 minutes, until tender. Puree in food processor and measure.
- Thoroughly combine pumpkin, brown rice syrup, egg yolks, milk, spices, salt and bitters in a medium pot on very low heat. Cook until it thickens up a bit stirring fairly often to prevent lumps. Put in the refrigerator to chill for a bit until mixture starts to congeal. While chilling beat the egg whites with sugar until very fluffy. - Line one 9 inch pie pan with whole gingersnap cookies, breaking as necessary for fitting.
- In a saucepan over medium heat cook pumpkin puree to heat through, stirring frequently.
- Separate the eggs. Combine the egg yolks, 1/2 cup sugar, milk, spices and butter or margarine. Add to pumpkin and cook, stirring frequently until mixture is of custard consistency. Remove mixture from heat.

- Put the gelatin to soak in 1/4 cup cold water.
- Beat the egg yolks in a double boiler, and add brown sugar, pumpkin, milk, and salt and spices to it.
- Cook and stir this over simmering water till it thickens.
- Add the soaked gelatin until it dissolves.
- Remove from the stove and chill till filling starts to set.
- (I put the pot in ice water).
- Whip the 3 egg whites till stiff but not dry.
