2 tablespoons masa harina (such as Maseca®)
1 teaspoon vanilla extract

1 cup whole raw almonds
1 cup unsalted butter, softened
2 tablespoons unsalted butter, softened
1 ¼ cups white sugar
2 cups masa harina (such as Maseca®)
2 teaspoons baking powder
1 ½ cups milk, or as needed
1 ½ cups rice flour

Steps:

  • Combine 2 cups milk and 1 cup sugar in a saucepan and bring to a boil over high heat.

3/4 cup unsalted butter
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons honey
1 tablespoon dark brown sugar
1 1/4 cups masa harina
1/2 cup milk
1 tablespoon ground mexican cinnamon (canela)
2 tablespoons raisins
1/4 cup dried cherries
1/4 cup dried apricot
2 tablespoons finely diced candied papaya
1 tablespoon minced orange zest
10 large dried corn husks, soaked in warm water for 30 minutes

Steps:

  • To prepare the filling, place the pine nuts in a hot, dry skillet, toast over medium heat for 4 to 5 minutes, stirring occasionally, until lightly browned; set aside.
