Steps:

  • Bring the heavy cream to a full boil in a medium saucepan over medium-high heat, then continue to boil rapidly for 45 to 50 minutes, until it s thickened, like a white sauce, stirring occasionally.
  • Remove the pan from the heat and add the Gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt, and then serve. If you must reheat, warm the sauce over low heat until melted, then whisk vigorously until the sauce comes together.

1 garlic clove, halved
1 cup sweet wine, such as Passito di Pantelleria or Sauternes
3/4 pound Gorgonzola dolce or other blue cheese, such as Stilton, crumbled
2 tablespoons plus 2 teaspoons cornstarch
1 tablespoon cream cheese
Kosher salt, to taste
Freshly ground black pepper, to taste
Crusty bread, apple cubes or grapes, for serving

Steps:

  • Rub cut side of garlic on inside of a large Dutch oven or a heavy-bottomed saucepan, rubbing the bottom and half way up the sides. Add wine and bring to a simmer over medium-high heat.
