Tips:

  • Choose the right onions: Sweet onions, such as Vidalia or Walla Walla, are best for this recipe. They have a milder flavor and will caramelize nicely in the oven.
  • Slice the onions evenly: This will help them cook evenly.
  • Use a large baking dish: This will allow the onions to spread out in a single layer.
  • Roast the onions at a high temperature: This will help them caramelize and develop a deep flavor.
  • Don't overcrowd the baking dish: If the onions are too crowded, they will not cook evenly.
  • Add the tomatoes and garlic halfway through cooking: This will prevent them from burning.
  • Season the onions with salt and pepper to taste: You can also add other herbs and spices, such as thyme, rosemary, or oregano.

Conclusion:

Thyme Roasted Sweet Onions with Tomatoes and Garlic is a delicious and easy-to-make side dish. It is perfect for any occasion, from a weeknight dinner to a holiday feast. The onions are caramelized and tender, the tomatoes are juicy and sweet, and the garlic adds a savory flavor. Serve this dish with grilled chicken, fish, or steak, or simply enjoy it on its own.
