Time 2h15m

Yield 4 serving(s)

Number Of Ingredients 3

10 ounces semi-sweet chocolate chips (See Note 1)
2 (10 1/2 ounce) packages silken tofu or 2 (10 1/2 ounce) packages silken firm tofu (See Note 2)
3 tablespoons maple syrup (or other liquid sweetener of your choice; can use less, to taste)

Steps:

  • Note 1: vegans: use barley-malt-sweetened nondairy chocolate chips or use a really good vegan chocolate bar (like Rapunzel Organic Bittersweet) instead of some or all of the chips.
  • Note 2: I use the Mori Nu brand of tofu for this (since it's from their box), but you can use any brand, just make sure it is the"silken" type and not regular.
  • Melt choc chips in a double boiler over low heat or in microwave (if you know what you're doing).
  • Put tofu, sweetener, and melted chocolate into a blender and process until very smooth.
  • Pour into a serving bowl or bowls and refrigerate, covered, for at least a couple of hours.
  • Cover this well, because it will pick up EVERY odor in your refrigerator otherwise.

The Minimalist: Out of the Wok (May 20, 2009)
3/4 cup sugar
1 pound silken tofu
8 ounces high-quality bittersweet or semisweet chocolate, melted
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon
1/2 teaspoon chili powder, or more to taste
Chocolate shavings (optional).

Steps:

  • 1. In a small pot, combine sugar with 3/4 cup water; bring to a boil and cook until sugar is dissolved, stirring occasionally. Cool slightly. 2. Put all ingredients except for chocolate shavings in a blender and purée until completely smooth, stopping machine to scrape down its sides if necessary. Divide among 4 to 6 ramekins and chill for at least 30 minutes. If you like, garnish with chocolate shavings before serving. Yield: 4 to 6 servings.

Tips:

  • Choose the right tofu: For the smoothest pudding, use silken tofu. It has a soft, creamy texture that will blend perfectly with the other ingredients.
  • Press the tofu: Pressing the tofu helps to remove excess water, which will make the pudding thicker and creamier. To press the tofu, wrap it in a few layers of paper towels and place it on a plate. Place another plate on top of the tofu and weigh it down with something heavy, such as a can of beans or a heavy skillet. Let the tofu press for 30 minutes.
  • Use good quality chocolate: The chocolate is the star of this pudding, so it's important to use good quality chocolate. Use a chocolate that you enjoy eating on its own.
  • Sweeten to taste: This recipe calls for 1/4 cup of maple syrup, but you can adjust the amount of sweetener to taste. If you like your pudding sweeter, add more maple syrup or another sweetener of your choice.
  • Chill the pudding before serving: Chilling the pudding allows it to set and become more firm. For best results, chill the pudding for at least 2 hours before serving.

Conclusion:

This tofu chocolate pudding is a delicious and healthy dessert that is perfect for any occasion. It's easy to make, and it's a great way to get your daily dose of protein and calcium. So next time you're craving something sweet, reach for this tofu chocolate pudding instead of a traditional chocolate pudding. You won't be disappointed!
