TOMATO, AVOCADO, CARROT & CELERY SALAD

Tomato, Avocado, Carrot & Celery Salad image

Fresh, healthy, simple, and delicious! Hit your local Farmer's Market, chop and chill! I discovered this as I was trying to come up with a way to get some veggies and I was craving something crunchy and refreshing. I had planned to make a citrusy dressing of some sort to drizzle over it, but if your tomato is full of flavor, you don't need it! A wonderful afternoon snack. (Completely original recipe - but so simple, not sure I can call it a recipe!)

Time 5m

Yield 2 serving(s)

Number Of Ingredients 4

1 large ripe tomatoes
4 celery ribs, leaves removed
1 ripe avocado (it's ok if it's even a little over ripe and soft)
1/2 cup corn (thawed)

Steps:

  • Chop into bite size chunks according to preference. (The larger the chunks, the more distinct the flavors - my personal preference). Combine and toss. No dressing required!
  • For variety, add fresh cilantro perhaps?

TOMATO AND AVOCADO SALAD

Tomato and Avocado Salad image

A simple palatable avocado salad blended with onion and tomato is one of the easiest and healthiest salads. It is normally used as an appetizer or as a side salad with the main course. Avocado belongs to the pear family and is also famously known as alligator or croc pear because of its shape and dark green roughly textured skin. Avocado is considered as a super healthy food and is a store house of nutrients like monounsaturated fats and omega-3. Avocado not only keeps your heart healthy but also protects your eyes and skin. Most importantly it provides protection against cancer in particular breast cancer.

Carrot Avocado Salad image

Categories     Salad     Onion     Side     Vegetarian     Quick & Easy     Avocado     Carrot     Healthy     Vegan     Cilantro     Boil     Gourmet     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 side-dish servings

Number Of Ingredients 9

1 lb medium carrots
1/2 cup chopped fresh cilantro
1/4 cup finely chopped onion
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 small garlic clove, finely chopped
3/4 teaspoon salt
1/4 teaspoon black pepper
1 firm-ripe California avocado

Steps:

  • Halve carrots lengthwise, then cut diagonally into 2-inch pieces. Cook carrots in a 4- to 6-quart pot of boiling salted water until just tender, 5 to 6 minutes. Drain in a colander and transfer to a bowl of ice and cold water to stop cooking. Let stand 5 minutes, then drain again and pat dry.
  • While carrots cool, stir together cilantro, onion, oil, lemon juice, garlic, salt, and pepper in a large bowl until combined.
  • Quarter avocado lengthwise, then peel and pit. Cut into 1/2-inch pieces and add to dressing along with carrots. Toss to combine.

Tips:

  • Choose ripe, flavorful tomatoes: Look for tomatoes that are deep red in color and have a slight give when you gently squeeze them.
  • Use a sharp knife to cut the tomatoes: This will help prevent them from getting bruised.
  • Don't overmix the salad: Mix the ingredients gently to avoid breaking up the tomatoes.
  • Chill the salad before serving: This will help the flavors to meld together.
  • Serve the salad with a light dressing: A simple vinaigrette or lemon-tahini dressing is a good option.

Conclusion:

This tomato avocado carrot celery salad is a refreshing and healthy side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its vibrant colors and delicious flavors, this salad is sure to be a hit at your next potluck or barbecue.
