Tuna steaks are a flavorful and versatile fish that can be cooked in a variety of ways. When cooked properly, tuna steaks are moist and flaky, with a mild flavor that pairs well with a variety of sauces. One classic way to cook tuna steaks is to pan-sear them and serve them with a creamy shrimp sauce. This dish is simple to make and can be ready in under 30 minutes. The creamy shrimp sauce is made with a combination of butter, flour, milk, and shrimp, and it adds a rich and decadent flavor to the tuna steaks.

TUNA STEAKS WITH CREAMY SHRIMP SAUCE
This is the best dinner I've ever made ! I got the recipe from another website....I know that's not sexy but, trust me the dish is. It taste like something out of a resturant. I doubled the sauce but, you don't have to. Also it seems like a lot of onions but, it all blends together nicley in the end. I hope you make it. You'll love it !

Steps:
- Rinse and pat tuna steaks dry. Place zest on top of cutting board. Pile rosemary and parsley leaves on top of zest. Pile garlic and some coarse salt and black pepper or grill seasoning on top of herbs. Finely chop the garlic, herbs, and spices. Drizzle the olive oil over the tuna steaks just enough to coat each side. Rub herb and garlic mixture into fish, coating pieces evenly on each side. Let stand 10 minutes.
- Grill tuna steaks 6 minutes on each side or 4 minutes on each side, if you prefer pink tuna at the center. Cook steaks over: high setting on indoor electric grill, medium high heat on outdoor gas grill or, 6 inches from hot, prepared charcoal.
- Serving suggestions: garlic toasts or grilled crusty bread
- Combine first 4 ingredients in a bowl or large food storage plastic bag. Coat mushroom caps evenly in marinade.
- Place mushroom caps on the grill cap-side-up and season with grill seasoning or salt and pepper. If you are using an indoor tabletop electric grill, preheat to 400 degrees F or "high" setting. If you are using an outdoor gas grill, preheat to medium high; for a charcoal grill, prepare coals and cook mushrooms 6 inches from hot coals. Mushrooms will cook 4 to 6 minutes on each side. Cook mushrooms covered or under tin foil tent and turn occasionally.
- Combine tomatoes, rosemary, and smoked mozzarella. Drizzle with oil and toss.
- Fill mushroom caps with tomato mixture and top with sliced mozzarella. The mushrooms will look like small pizzas. Place caps in oven at 425 degrees F until cheese melts or you can close grill lid or replace tin foil tent over mushroom caps to melt cheese, it will take 1 to 3 minutes. Serve as-is or, place stuffed caps on garlic toast or sliced crusty bread to catch the juices.
PAN-SEARED TUNA STEAKS WITH GINGERY DIPPING SAUCE
This recipe was inspired by a grilled tuna steak that I ordered at a sleepy roadside restaurant in Vietnam. Working tableside on a small charcoal brazier, the young waiter cooked a half-inch-thick tuna steak with care and patience. Back in my home kitchen, I decided to adapt the recipe to the stove top. I find that pan searing allows greater control than grilling over the doneness of the lean, meaty steaks, yielding juicier results. There are no tricks here. The tuna steaks are coated with the same seasonings used for Grilled Shrimp and Squid (page 111), and the gingery dipping sauce offers a good contrast to the richness of the fish. Serve with Chicken Dumpling and Chrysanthemum Leaf Soup (page 61), boiled gailan (Chinese broccoli) or regular broccoli (which are both good with the dipping sauce), and rice.

Steps:
- Pat the tuna steaks dry with paper towels. To make the marinade, in a bowl large enough to accommodate the tuna steaks, whisk together the sugar, fish sauce, lime juice, and oil. Add the steaks and turn them to coat well. There's no need to let the steaks marinate.
- Heat a 12-inch nonstick skillet over medium-high heat until hot. To test if it is ready, flick a drop of water into it. It should immediately dance and then evaporate. Add the tuna steaks and let them cook, undisturbed, for 2 minutes. The tuna should brown nicely on the underside, perhaps even with some dark caramelized spots. Using tongs, carefully turn the steaks over. Without disturbing them, let them cook for about another 1 1/2 minutes for rare or 3 minutes for medium-rare.
- To check for doneness, nick the steaks with the tip of a paring knife. A rare steak should be opaque at the edges and translucent red and cool in the middle. A medium-rare steak should be opaque at the edges and reddish pink in the middle. For a medium steak, cook for medium-rare but let the steak rest for 5 minutes under a foil tent before cutting. The steak will continue to cook as it rests.
- Transfer the steaks to a cutting board. Cut each steak into 1/4-inch-thick slices. Arrange the slices on a platter and serve immediately with the dipping sauce.

FRESH TUNA STEAKS WITH HOISIN GINGER MARINADE
We were introduced to fresh tuna, at this little fish store in Hawaii many years ago. The marinade that was used was so incredible that I had to try and re-create it at home. I think I came in pretty close. Most restaurants grill their tuna for 3-4 minutes per side, but I tend to like mine rare, so I only cook each side for 1-1/2 minute. Tuna must be as fresh as possible

Tips:
- Selecting the right tuna steaks: Look for steaks that are at least 1 inch thick and have a deep red color. Avoid steaks that are thin or have a grayish hue.
- Preparing the tuna steaks: Pat the tuna steaks dry with paper towels before cooking. This will help to prevent the steaks from sticking to the pan and will also help to create a nice sear.
- Cooking the tuna steaks: Heat a large skillet over medium-high heat. Add the tuna steaks and cook for 3-4 minutes per side, or until the steaks are cooked to your desired doneness. Be careful not to overcook the tuna steaks, as they will become dry and tough.
- Making the creamy shrimp sauce: While the tuna steaks are cooking, make the creamy shrimp sauce. In a medium saucepan, melt the butter over medium heat. Add the onion and garlic and cook until softened. Stir in the flour and cook for 1 minute, or until the mixture is golden brown. Slowly whisk in the milk and cream. Bring the mixture to a simmer and cook for 5 minutes, or until the sauce has thickened. Stir in the shrimp and cook until heated through.
- Serving the tuna steaks: Spoon the creamy shrimp sauce over the tuna steaks and serve immediately.
Conclusion:
Tuna steaks with creamy shrimp sauce is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The tuna steaks are cooked to perfection and the creamy shrimp sauce is rich and flavorful. This dish is sure to please everyone at your table.
