2 pounds ground turkey
1 (8 ounce) package Cheddar cheese, cubed
1 onion, diced
1 cup seasoned bread crumbs
¾ cup milk
2 eggs
2 tablespoons Worcestershire sauce
2 cloves garlic, diced
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a muffin tin with cooking spray.

3/4 cup ketchup
2 pounds ground turkey
1 cup chopped onion (1 medium onion)
2 slices sandwich bread, torn into small pieces
1 cup grated cheddar cheese
1/2 chopped dill pickle (1 medium pickle)
1 tablespoon Worcestershire sauce
1 large egg, lightly beaten
2 garlic cloves, minced
2 teaspoons dry mustard powder
1 teaspoon salt
1/2 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. In a large bowl, mix 1/2 cup ketchup with the remaining ingredients until well combined. Divide mixture among 6 cups of a 12-cup (4 ounce) muffin tin, spacing them evenly and gently compressing and mounding the tops. Brush tops with remaining 1/4 cup ketchup.
  • Transfer tin to oven; bake until inside temperature registers 170 degrees on an instant read thermometer, about 45 minutes.

2 pounds ground turkey, or ground chicken breasts
3 egg whites
1 cup quick cooking oats
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme
2 teaspoons dry yellow mustard
2 teaspoons black pepper
2 teaspoons chipotle pepper spice (we could only find this at Whole Foods)
2 tablespoons garlic powder, or 2 cloves, minced
2 celery stalks, finely chopped, about 1 cup
1 small onion, finely chopped, about 1 cup

Steps:

  • Preheat oven to 375°F. Line baking sheet with foil (Jamie uses muffin tins but they get very messy!). If you use the easy release foil, it makes for quick clean-up. Mix all the ingredients together in a large bowl. Roll the mixture into balls & place on your baking sheet or in your muffin tin. Bake for 40 minutes (This may vary depending on your oven. I would suggest using a meat thermometer to ensure your meat is fully cooked).

2 lbs lean ground turkey
3 egg whites
1 cup quick-cooking oats
1/2 teaspoon ground cumin
1/2 teaspoon dried thyme

1 teaspoon powdered chipotle pepper
1 teaspoon salt
2 tablespoons garlic powder (2 cloves minced)
1 small onion (finely chopped)
2 celery (finely chopped)

Steps:

  • Preheat oven to 375 degrees.
  • Spray muffin pan with canola or olive oil.
  • Mix all your ingredients together in one large bowl.
  • Roll the mixture into balls and place in muffin pan. Muffins should be about the size of a racquetballs.
  • Bake for 40 minutes.
  • Notes: The original recipe calls for 2 tsp of Chipotle Pepper spice (referred to here as powdered chipotle pepper) but I found that too much. Feel free to try it with 2 tsp of the spice if you prefer a more smokey flavour.
