1 pound ground beef
1/2 pound bulk pork sausage
1/2 pound medium fresh mushrooms, quartered
2 large carrots, chopped
2 celery ribs, chopped
1 medium onion, chopped
2 garlic cloves, minced
1/2 cup orange juice
2 teaspoons grated orange zest
1 teaspoon ground nutmeg
1/4 teaspoon Worcestershire sauce
1/2 teaspoon salt, divided

1/4 cup Dijon mustard
2 teaspoons brown sugar
2 teaspoons rice vinegar

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a large skillet, cook the beef, sausage, mushrooms, carrots, celery, onion and garlic over medium heat until meat is no longer pink and the vegetables are tender; drain., Stir orange juice, orange zest, nutmeg, Worcestershire sauce and 1/4 teaspoon each salt and pepper into skillet. Bring to a boil; cook until liquid is evaporated. , Preheat oven to 350°. Transfer meat mixture to two greased 8-in. square baking dishes., Drain potatoes and place in a large bowl. 1 pound Yukon gold potatoes peeled and cubed
1/2 cup milk
1 tablespoon butter
Salt and freshly ground black pepper
3 cups leftover beef stew from Beef Stew and Beer Biscuits, recipe follows
4 celery stalks, chopped
4 carrots, peeled and sliced into 1-inch thick rounds
4 red potatoes, chopped into large dice
1 medium onion, chopped
1 teaspoon chopped fresh thyme leaves
1 (1-pound) chuck roast, cut into 1-inch cubes
2 tablespoons all-purpose flour
1 (14.5-ounce) can less sodium beef broth
1 (14.5-ounce) can diced tomatoes
1 tablespoon cider vinegar
2 teaspoons minced garlic
1 teaspoon hot sauce
Salt and fresh ground black pepper
2 1/4 cups all-purpose baking mix, recipe follows
2 tablespoons sugar
1 cup beer
6 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons salt
3/4 cup shortening

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over medium heat. Add the potatoes, reduce the heat and simmer until the potatoes are cooked through and tender. Drain, return to pot and mash with a potato masher.
  • In a small pot over low heat, add the butter and milk and heat until hot. Mix the butter and milk mixture to the mashed potatoes and season with salt and pepper, to taste. (For very creamy potatoes use a hand mixer to incorporate the milk and butter mixture. Only mix for about 45 seconds to prevent potatoes from getting gummy.) Set aside.
  • Evenly divide the beef stew into 4 (11-ounce) ramekins. Top with the mashed potatoes and bake until the stew is bubbling and potatoes are slightly browned on top, about 30 minutes.
  • In a 6-quart slow cooker combine the celery, carrots, potatoes, onions, thyme and beef. In a large bowl, stir together all the remaining ingredients and pour over the beef and vegetables in the slow cooker. Cover and cook on high for 5 hours. Transfer to a serving bowl and serve with Beer Biscuits.
  • Beer Biscuits:
  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, mix all ingredients with a whisk until just combined. Using 2 spoons divide dough into 4 even mounds and put on a baking sheet. Bake for 8 to 10 minutes until golden brown.
  • All-Purpose Baking Mix:
  • In a large bowl combine the flour, baking powder and salt. Cut in the shortening with a pastry knife or fork until the mixture is well blended. Use in recipes that call for Bisquick or all-purpose mix.

Steps:

  • Preheat the oven to 375 degrees F and lightly spray two 16-ounce oven-safe ramekins with nonstick cooking spray. Set aside.
  • Heat up the olive oil in a large skillet over medium-high heat. Add the carrots, onion and garlic and cook until softened and fragrant, 5 to 7 minutes.
  • Add in the turkey and peas and stir to combine. Sprinkle the flour over the mixture and stir to incorporate, then stir in the tomato paste. Gently add the chicken stock and Worcestershire sauce. 4 russet potatoes, scrubbed clean and patted dry
1 tablespoon olive oil
1 ½ teaspoons kosher salt, divided, plus more to taste
3 tablespoons unsalted butter
¼ cup heavy cream, warm
½ teaspoon freshly ground black pepper, plus more to taste
½ cup shredded cheddar cheese
¼ cup fresh chives, thinly sliced
1 tablespoon olive oil
1 medium yellow onion, diced
3 garlics, minced
1 lb ground beef, or ground lamb
2 teaspoons kosher salt, divided, plus more to taste
1 teaspoon freshly ground black pepper, divided, plus more to taste
2 teaspoons worcestershire sauce
1 tablespoon tomato paste
½ cup beef stock

Steps:

  • Set one rack at the top and one rack in the center of the oven. Preheat the oven to 400°F (200°C).

This is the ultimate Thanksgiving/Christmas dinner leftover recipe. The recipe keeps in mind that the ingredients being used are from separate dishes that are *already* seasoned. If you are making either of the potatoes from scratch for the recipe, go ahead and season them as if you were making that dish to serve as a side. The same with the gravy, if it is not homemade roasted turkey gravy, add some more seasoning to it. Of course you do not have to have leftovers to make this, but it is a good way to use up the turkey, mashed potatoes, sweet potatoes and gravy without the dish tasting like leftovers. I have also made it with chicken with excellent results. This is a real family pleaser and our 4 year old actually asks for this for dinner a lot. The original recipe was adapted from Chef Jimmy Bradley of the Red Cat in New York City. It can also be prepared in individual 1 1/2-cup ramekins; check them for doneness after 20 minutes. WINE: A bighearted Chardonnay will echo the texture of the smooth gravy and the soft mashed potato topping. Look for a reasonably priced, fruity wine, such as Australia's 1999 Rosemount or the 1999 Lindemans Bin 65.
