Yield 4 servings

Number Of Ingredients 8

2 lb yukon gold potato
½ cup whole milk
½ cup heavy cream
8 cloves garlic, crushed
½ cup unsalted butter, cubed, cold
2 teaspoons kosher salt
freshly ground black pepper, to taste
chive, finely chopped, for serving

Steps:

  • On a cutting board, peel the potatoes. Place the potatoes in a large bowl of cold water after peeling to avoid discoloration.
  • Cut the potatoes into 1-inch (2 cm) cubes.
  • Add the potatoes to a large pot and cover with cold water. Bring to a boil over high heat, then reduce the heat to low and simmer for 12 minutes.
  • In a small saucepan, bring the milk, heavy cream, and garlic to a simmer over low heat.
  • Remove the pot from the heat and strain the cream through a fine mesh sieve.
  • Drain the potatoes in a colander and transfer back to the pot.
  • Mash the potatoes with a potato masher, potato ricer, or by pushing through a fine mesh sieve with a spatula.
  • Add the cubed cold butter and salt. Stir to combine.
  • Gradually add the cream mixture to the potatoes, little by little, until fully incorporated.
  • Top with freshly ground black pepper and sprinkle with chives and serve.

ULTIMATE INSTANT POT® MASHED POTATOES

Ultimate Instant Pot® Mashed Potatoes image

These potatoes are unlike any other! The difference with these is that they are pressure-cooked with homemade chicken stock, which gives the potatoes so much flavor, and sometimes eliminates the need for milk or cream and salt! I made this recipe just yesterday for someone who doesn't like mashed potatoes, and they loved it!

Time 35m

Yield 4

Number Of Ingredients 5

3 large Yukon Gold potatoes, sliced into 1/4-inch rounds
2 cups chicken stock, or more to taste
2 tablespoons salted butter, softened, or more to taste
1 clove garlic, minced, or more to taste
3 tablespoons cream cheese, softened

Steps:

  • Layer potatoes onto a steamer basket set inside a multi-functional electric pressure cooker (such as Instant Pot®). Add chicken stock and secure the lid. Select high pressure according to manufacturer's instructions; set timer for 9 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Carefully remove sliced potatoes from the steamer basket; drain and reserve remaining stock.
  • Place butter and garlic in the empty pressure cooker; select Saute function. Cook and stir for 90 seconds. Return potatoes to the pot and mash with cream cheese.

ULTIMATE CROCK POT MASHED POTATOES

Ultimate Crock Pot Mashed Potatoes image

I found this recipe on the Budget Savvy Diva site and it has been saving me tons of time (and stess) for the past few weeks! And like she said in the blog, the cream cheese makes all the difference. I can't wait to make this for our huge Thanksgiving dinner so I can focus on other recipes.

Time 5h15m

Yield 25 serving(s)

Number Of Ingredients 9

5 lbs russet potatoes (I have used Yukon Gold, also)
1 1/2 cups chicken broth
1/4 cup butter, cut into small cubes
1 1/4 cups light sour cream
1 garlic clove, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup milk, warmed
2 ounces light cream cheese

Steps:

  • Peel potatoes and cube. She stated that she likes to get 12 cubes per potato. You can do this if using Russets but not if using Yukons. Each cube should be about 1-1 1/2 inches.
  • Place potato cubes, butter and chicken broth into slow cooker and set to High.
  • Cover and cook for 4 1/2 hours.
  • Mash roughly in crock pot and add garlic, sour cream, salt, pepper, milk, and cream cheese and finish mashing.

ULTIMATE MASHED POTATOES

A self-created comfort food, these mashed potatoes are a little weird, but entirely too good! I will occasionally add sweet corn for a bit of crunch.

Tips:

  • Use starchy potatoes: Russet potatoes are the best choice for mashed potatoes because they are high in starch, which makes them fluffy and creamy.
  • Peel and cut the potatoes evenly: This will help them cook evenly.
  • Boil the potatoes in salted water: The salt will help to flavor the potatoes and prevent them from becoming bland.
  • Drain the potatoes thoroughly: This will help to remove excess water and make the potatoes light and fluffy.
  • Mash the potatoes with a potato ricer or food mill: This will give them a smooth and creamy texture.
  • Add butter, milk, and seasonings to taste: Start with a small amount of butter and milk, and then add more to taste. Season the potatoes with salt, pepper, and garlic powder.
  • Serve the mashed potatoes immediately: They are best when served hot and fresh.

Conclusion:

Mashed potatoes are a classic comfort food that can be enjoyed by people of all ages. They are easy to make and can be dressed up or down to suit any occasion. Whether you are serving them for a holiday dinner or a weeknight meal, mashed potatoes are sure to be a hit.
