1 tablespoon granulated sugar
2 ½ cups chocolate candy, divided
6 tablespoons salted butter, 3/4 stick
10 cups mini marshmallows
1 teaspoon vanilla extract
7 cups rice cereal

Steps:

  • Line a 9-inch (22 cm) square pan with 2 sheets of parchment paper and sprinkle the sugar over the bottom of the pan.
  • Chop the chocolate candy into small pieces, then transfer to the freezer while you prepare the crispy treat mixture.
  • In a large nonstick pot, melt the butter over medium-low heat. Reduce the heat to low, then add the marshmallows and stir until completely melted. Add the vanilla and stir to incorporate.
  • Stir in the rice cereal. Remove from heat. Let cool slightly.
  • Transfer half of the mixture to the prepared pan and press into an even layer. Add 2 cups (350 g) of the candy in an even layer, then top with the remaining rice cereal mixture and spread in an even layer. Top with the remaining candy.
  • Let set at room temperature for 2 hours, or in the refrigerator for 1 hour. Cut into 9 bars, then serve.

Steps:

  • Coat a 9 x 13 inch pan with spray oil or margarine.
  • In a large saucepan, melt the butter or margarine over low heat. Add the vanilla. Melt the marshmallows into the margarine, stirring. 1 cup sugar
1 cup unsalted butter, softened
1 large egg
2 teaspoons vanilla
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
festive candy sprinkles (optional)

Steps:

  • Mix sugar, butter, egg and vanilla in a large bowl.
  • In another, medium-sized bowl, mix the dry ingredients.
  • Gradually add this mixture to the larger bowl, beating with a hand-held mixer.
  • Cover and refrigerate for a minimum of one hour.
  • Heat the oven to 375°.
  • Shape the dough into 1-inch balls.
  • If you want to add sprinkles, place the balls into a shallow pan, such as a pie pan, that has a layer of sprinkles on the bottom.
  • Gently flatten the dough into the sprinkles using the bottom of a glass.
  • If you are not using sprinkles, dip the bottom of the glass in granulate sugar.
  • Line a cookie sheet with parchment paper.
  • Bake until barely browned (these cookies are meant to be soft) or about 8 minutes.

1 cup butter, softened
1 egg
2 teaspoons vanilla extract
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon cream of tartar
3 tablespoons white sugar

Steps:

  • In a medium bowl, cream together butter and sugar. Add egg and vanilla; continue to cream until smooth. Sift together the flour, baking soda, and cream of tartar; stir into the creamed mixture until well blended. Refrigerate dough for at least 1 hour.
  • Preheat oven to 375 degrees F ( 190 degrees C ).
  • Roll dough into 1 inch balls and place onto a cookie sheet. Cookies should be at least 2 inches apart. 1 cup Brown Butter, recipe follows, at room temperature
1 cup packed brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking soda
3 cups quick-cooking oats
1/2 cup pecans, finely chopped
1 cup (2 sticks) salted butter

Steps:

  • Cream the Brown Butter with both sugars in a stand mixer until well combined.
  • Beat the eggs in a separate bowl. Add the vanilla and stir to combine. Add to the butter/sugar mixture and mix well.
  • Combine the flour, salt and baking soda in a separate bowl. Mix carefully into the egg/butter mixture until well combined. Add the quick-cooking oats and mix well again. Add the finely chopped pecans and mix well to combine.
  • Divide the dough in half and place each half of the dough on a sheet of waxed paper. Roll the dough into a log and wrap it tightly in the waxed paper. Now you can either chill or freeze the dough until later, or you can go ahead and slice and bake the dough.
  • When you are ready to bake, preheat the oven to 350 degrees F.
  • Slice the dough 3/4-inch-thick, then place on a cookie sheet about 2 inches apart. Bake until they are golden brown, about 10 minutes. Let cool on the cookie sheets.
  • Add the butter to a medium skillet over medium heat. Allow it to melt and bubble up, swirling the pan to keep the butter moving around, for 3 to 4 minutes. When the butter is a medium golden brown, remove the pan from the heat (it will continue browning in the pan over the next 30 seconds or so!). Pour the butter (and any solids in the bottom of the pan) into a heatproof bowl and allow it to cool completely, about 30 minutes.

3 tablespoons margarine
4 cups mini marshmallows
6 cups crispy rice cereal (Rice Krispies)
1 teaspoon real vanilla extract
1 teaspoon almond extract

Steps:

  • Melt margarine in large non-stick pan (I use my T-Fal Dutch oven) over medium-low heat.
  • Add marshmallows and stir until melted and smooth.
  • Turn off flame.
  • Stir in extracts.
  • Fold in cereal and continue folding until well coated.
  • Spray 13 X 9 pan with cooking spray and press mixture into pan (I spray my hand with a little Pam and then use my hand but you can use the back of a buttered spoon if you don't have asbestos fingers like mine).
  • Cool and cut into squares.
