Vegan Tantanmen With Pan-Fried Tofu image

Tantanmen is the Japanese version of dan dan noodles, a Sichuan dish of noodles and pork bathed in a spicy sesame broth. Chinese or Japanese sesame pastes, which are made from roasted sesame seeds and yield a more robust flavor than tahini, are traditionally used in this dish. (But tahini works too; it will produce a mellower, creamier result.) For those who keep doubanjiang, or Chinese fermented bean paste, on hand, add a teaspoon or two to your soup base for even deeper flavor. Slices of pan-fried tofu make this dish feel more substantial, but if you are looking for a shortcut, crumble it up and pan-fry it alongside the mushrooms. For non-vegans, add a jammy egg.

Kosher salt and black pepper
12 ounces dried ramen noodles
3 to 4 tablespoons extra-virgin olive oil
1 (12-ounce) package extra-firm tofu, drained and sliced crosswise, 1/4-inch thick
8 large shiitake mushrooms (about 8 ounces), trimmed and thinly sliced
4 cups vegetable stock
1 (5-by-6-inch) piece dried kombu (about 1/2 ounce), optional
2 cups soy or oat milk, at room temperature
1/2 cup Chinese or Japanese sesame paste, or use tahini
1/4 cup soy sauce
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon granulated sugar
2 tablespoons chile oil, plus more for serving
1 cup frozen corn, defrosted and drained, if needed
4 scallions, finely chopped
1 tablespoon roasted sesame seeds

Steps:

  • Bring a pot of salted water to a boil over high heat. Add noodles and cook until al dente, according to package instructions. Drain and run under cold water until the noodles are completely cold. (This stops the noodles from cooking further.) Set aside to drain.
  • Heat a large skillet over medium-high. When hot, add 1 tablespoon olive oil and arrange the tofu slices in a single layer. Generously season the tofu with about 1/2 teaspoon salt and about 1/8 teaspoon pepper. Reduce heat to medium, and cook tofu for 3 to 4 minutes until golden. Flip the tofu, and cook until golden on the other side, about 2 to 3 minutes. (Depending on the size of your skillet, you may need to cook your tofu in two batches.) Remove from the pan, set aside on a plate.
  • To the same pan, add 1 tablespoon olive oil and the mushrooms. Season with salt and pepper. Pan-fry until mushrooms are tender and slightly golden, about 6 minutes.
  • Prepare the broth: Pour the vegetable stock into a large pot and add the kombu, if using.
  • Bring to a gentle simmer and cook over medium heat, about 7 minutes. Remove kombu (keep for another use) and turn off heat. Allow to sit for 2 minutes, then gradually whisk in milk, adding a little at a time, so it doesn't curdle. Once the milk has been added, heat broth over medium until it simmers.
  • In a medium bowl, combine the sesame paste, soy sauce, sesame oil, rice vinegar, sugar and chile oil. Divide mixture across four deep noodle bowls.
  • Pour the hot broth over the sesame soup base, dividing it evenly among the bowls. Whisk to combine the base with the broth.
  • Divide the noodles across the bowls, and top each bowl with a few slices of tofu, mushrooms, corn, scallions, sesame seeds and an extra drop of chile oil.

12-Minute Scrambled Tofu Vegan Fried Rice image

Tofu replaces eggs for a protein-rich (and vegan) fried rice recipe. From chopping board to table in 12 minutes!

7 ounces (half of a 14-ounce block) extra-firm tofu
1 tablespoon olive oil
1/2 cup finely diced yellow onion (about 1/2 small onion)
1 medium clove garlic (minced)
2 tablespoons toasted sesame oil (divided)
1 thumb-sized knob ginger (peeled and minced) (about 1 tablespoon)
1/2 teaspoon smoked paprika
1/4 teaspoon ground turmeric
3 cups cooked brown rice (I like brown Basmati rice) (cold, day-old rice is best)
1 cup frozen corn kernels
1 cup frozen peas
2-3 tablespoons Tamari or soy sauce
Chopped chives or other herbs
Chopped scallions
Sriracha sauce
Cooked and crumbled bacon
Diced avocado

Steps:

  • Set the tofu on a large cutting board and mash with a potato masher or fork until it's crumbled. Set aside.
  • Place a large saute pan over medium heat. Add the olive oil. When hot, add the onion. Saute until softened, about 3 minutes. Add the garlic and cook, stirring occasionally, for 1 minute.
  • Add one tablespoon of the sesame oil, then add the ginger, smoked paprika, turmeric, and mashed tofu. Cook, stirring until the spices are well-incorporated, about 2 minutes.
  • Increase heat to medium-high. Add the remaining sesame oil and the rice. Cook, stirring frequently, until the rice sizzles and is thoroughly warmed through, about 2 minutes.
  • Stir in the corn, peas, and Tamari (or soy sauce) and cook until the veggies are warm, about one more minute.
  • Taste and add additional Tamari or soy sauce if desired.
  • Serve topped with chopped chives or other herbs of choice, chopped scallions, or even a little crumbled bacon for the carnivores' portions if you like. We like to pass the Sriracha with this fried rice, as well.

1 (12 ounce) package extra-firm tofu
3 tablespoons nutritional yeast
2 tablespoons all-purpose flour
2 teaspoons garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons olive oil

Steps:

  • Drain and press tofu between paper towels until fairly dry. Slice tofu into strips or 1/2-inch cubes.
  • Combine nutritional yeast, flour, garlic powder, salt, and pepper in a resealable plastic bag. Add tofu pieces in batches and gently shake until coated.
  • Heat oil in a skillet over medium heat. Add tofu in batches and cook, turning to brown all sides, until golden brown and lightly crispy, 4 to 6 minutes. Drain on a plate lined with a paper towel to absorb excess oil.

Basically, I used tofu instead of eggs, and the meat-eaters thought it was beef! Note that I prepare the dish with a wok. A regular frying pan might require longer cooking time. I cook until everything looks done, so I don't always pay attention to the time. Experimenting is half the fun of stir-fry!

1 (16 ounce) package soft tofu, frozen until firm
1 cup vegan Worcestershire sauce
½ cup soy sauce, divided, or to taste
1 tablespoon oil, or as needed
¼ cup chopped green onions
2 cloves garlic, chopped
1 yellow onion, diced
2 cups frozen mixed vegetables
3 cups cooked white rice, or more to taste
1 teaspoon mirin (Japanese rice wine)
1 teaspoon sesame oil
salt and ground black pepper to taste
1 (14 ounce) can bean sprouts, drained

Steps:

  • Thaw tofu until it comes to room temperature, about 2 hours. Squeeze between paper towels to drain thoroughly and transfer to a bowl. Add Worcestershire sauce, then enough soy sauce to cover. Let marinate, at least 1 hour.
  • Drain tofu, discarding marinade.
  • Heat a wok or large skillet over high heat until smoking, about 30 seconds. Add oil; heat until shimmering, about 20 seconds. Add green onions and garlic; cook and stir until fragrant, about 45 seconds. Add tofu; stir-fry until scrambled and heated through, 1 to 2 minutes.
  • Cook yellow onion in the wok until softened, 2 to 3 minutes. Add frozen vegetables; saute until heated through, 2 to 3 minutes. Stir in rice, mirin, sesame oil, and enough soy sauce to cover the rice. Season with salt and pepper. Add bean sprouts; cook and stir until rice is hot, 1 to 2 minutes.
