2 cups rice flour
1 ½ cups almond milk
1 cup granular sucralose sweetener (such as Splenda®)
1 cup white sugar
4 teaspoons baking powder
6 fresh peaches, pitted and sliced
6 tablespoons vegan margarine (such as Earth Balance®), cut into cubes
¾ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan with cooking spray.
  • Stir rice flour, almond milk, sucralose sweetener, white sugar, and baking powder together in a large bowl. Spread batter in the prepared baking pan.

2 lbs peaches, peeled, pitted, and sliced
1 (8 ounce) container blackberries (or blueberries or raspberries)
1/3 cup sugar
1/2 cup almond milk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1 pinch salt

Steps:

  • Preheat the oven to 400°F. In a glass baking dish, toss together the fruit and sugar. Cover with foil. Bake for 20 minutes.
