1 (8 ounce) package dry penne pasta

Steps:

  • Preheat the oven broiler.

3 tablespoons red wine vinegar
1 large garlic clove
1/2 cup plus 2 tablespoons olive oil (preferably extra-virgin)
3/4 pound fusilli pasta
1 cup hickory smoke chips, soaked in water 30 minutes, drained
2 large ears fresh corn, husked
2 large zucchini, trimmed, halved lengthwise
1 large red onion, sliced into 3 large rounds

Steps:

  • Blend parsley, vinegar and garlic in processor until parsley is finely chopped, scraping down sides of bowl twice. With machine running, gradually add 1/2 cup olive oil. Season vinaigrette to taste with salt and pepper.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta. Rinse under cold water and drain again. Transfer to large bowl. Mix in 2 tablespoons vinaigrette.
  • Prepare barbecue (medium heat). Place smoke chips in 8x6-inch foil packet with open top. Set packet atop coals about 5 minutes before grilling.
  • Brush corn, zucchini and onion with remaining 2 tablespoons oil. Sprinkle with salt and pepper. Grill vegetables until cooked through and beginning to brown, turning often, about 12 minutes. Cool slightly. Cut kernels from corncobs. Cut zucchini and onion into 1/2-inch pieces.

1 teaspoon toasted sesame oil (optional)
1 garlic clove, minced
1 pinch red pepper flakes
1/4 cup vinegar
1/4 cup tamari
1/4 cup water
1 teaspoon maple syrup
1 cup broccoli, chopped
1 cup mushroom, sliced
1 pinch sea salt
1 tomatoes, diced
1/2 cup alfalfa sprout
1 green onion, chopped
200 g brown rice pasta
1 teaspoon hijiki seaweed, soaked in water, chopped (optional)
1 tablespoon cashews, chopped (garnish)

Steps:

  • Heat a small saucepan to medium, and add the oils, garlic and red pepper flakes. Stir and don't let the oil get too hot. Once the garlic is cooked, stir in the vinegar, tamari, water and maple syrup. Turn the heat down to medium-low, and stir occasionally while you prepare the vegetables.
  • The next part of this pasta salad is to sprinkle some sea salt on the broccoli and mushrooms in a bowl with a tight-fitting lid. Add some tamari if you like for flavor, put the lid on the bowl and shake for a few minutes, until the vegetables start to wilt. Let them marinate while you chop the tomato, green onion and optional cashews.

  • Toss zucchini, tomatoes, onion, mushrooms and dressing in large bowl until well coated.

3 oz linguini, I use Dreamfields low carb
8 oz fresh sugar snap peas
2 c celery, thinly sliced
1 c red bell pepper, thinly sliced
1/2 c scallions, sliced
DRESSING
1/4 c rice wine vinegar
1/4 c low sodium soy sauce
1-1/2 Tbsp toasted sesame oil
1 tsp spicy (chili) toasted sesame oil
2 tsp peeled fresh ginger, grated
1 large garlic clove, grated
1/2 tsp sugar
1 fresno chile seeded and finely chopped (optional)
GARNISHES- USE ANY OR ALL
chopped cilantro
dry roasted peanuts chopped
crushed black pepper
toasted sesame seeds or toasted almonds
bean sprouts

Steps:

  • 1. Cook pasta according to package directions. Add the sugar snap peas during the last 2 minutes of cooking. Drain and rinse with cold water. Place cooled pasta/snap pea mixture in a large bowl, stir in the celery, red pepper, and scallions.
  • 2. To make the dressing, I put all ingredients into a small jar and shake to combine. Pour dressing over pasta/veggie mix, stir and refrigerate for a half hour or so. Garnish with some or all of suggested condiments.
  • 3. I sometimes serve this as a side with grilled meat, but also love to stuff lettuce leaves with this salad and enjoy it as a roll-up appetizer. Plus, any vegetables you like should work in this recipe. Try green beans, broccoli, or carrots. You can also add a tablespoon of peanut butter to the dressing and make it a very kid friendly.

1 can Lg. Black Olives,sliced
7 Cooked, Sliced Ital. Sausage
1 pt. Grape Tomatoes
1 reg. jar Roasted Red Pepper, cut up in pieces
Handful (1/2 C.)Basil chopped

Crushed Red Pepper Flakes to taste
Good Quality Extra Virgin Olive Oil
Large Handful Parmesan or Romano Cheese

Steps:

  • Cook pasta al dente and drain. Add and mix some olive oil to coat the pasta and all the garlic and toss. Add all other ingredients (saving parsley and basil for last) Add additional olive oil and parmesan/romano to taste. Cover and chill til serving. Good to use at parties, for a dinner accompanied with a salad, and for a lunch dish. To keep this a vegetarian dish simply omit the italian sausage.

LEMON MAYONNAISE
2 c mayonnaise
1 c yogurt, plain and non-fat
1/2 c lemon juice, fresh
1/4 c tarragon, chopped fresh or 1 tablespoon, dried
1 tsp salt
PASTA SALAD
2 pkg pasta shells, medium, 16 oz. each
3 lb asparagus, blanched & cut into 3 inch pieces
2 lb snap pea pods, blanched
16 green onions, sliced, 1 cup
2 medium yellow bell peppers, coarsely chopped, 2 cups

Steps:

  • 1. In a large bowl, mix all lemon mayonnaise ingredients until well blended, set aside.
  • 2. Cook & drain pasta as directed on the package. Rinse with cold water, drain.
  • 3. To blanch the asparagus & pea pods, plunge them into boiling water, for 10-15 seconds or until they turn bright green. Remove from boiling water & plunge into a bowl of ice & water to stop the cooking, drain.
  • 4. In large bowl mix pasta & remaining ingredients. Stir in lemon mayonnaise until well mixed. Cover & refrigerate 1 - 2 hours or until chilled.

Tips:
