Yield Makes about 4 cups

Number Of Ingredients 9

1/4 cup fresh lime juice
2 tablespoons (packed) golden brown sugar
3 cups chopped seeded watermelon
1 cup chopped seeded honeydew melon or cantaloupe
1 medium cucumber, peeled, seeded, chopped
1/2 cup chopped red onion
1/4 cup chopped fresh mint
2 tablespoons finely chopped crystallized ginger
2 tablespoons minced seeded jalapeño chilies

Steps:

  • Whisk lime juice and sugar in large bowl until sugar dissolves. Add watermelon and all remaining ingredients; toss gently. Season with salt and pepper. (Can be prepared 2 hours ahead. Cover and chill.)

Tips:

  • Choose the right watermelon: A ripe watermelon will have a deep red color, a firm rind, and a hollow sound when tapped. Avoid watermelons with bruises or soft spots.
  • Use fresh herbs: Fresh herbs will give your salsa the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount called for in the recipe.
  • Don't over-chop the ingredients: You want the ingredients in your salsa to retain some of their texture. Chop them into small pieces, but don't puree them.
  • Chill the salsa before serving: This will help the flavors to meld together and make the salsa more refreshing.
  • Serve the salsa with your favorite chips, crackers, or vegetables: Watermelon salsa is a great appetizer or snack.

Conclusion:

Watermelon salsa is a refreshing and flavorful salsa that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. Experiment with different herbs and add-ins to create your own unique salsa. Watermelon salsa is a great way to use up leftover watermelon and is a healthy and delicious snack or appetizer.
