Tips:

  • Use a 9x13 inch baking dish for the cake to ensure that it rises properly and cooks evenly.
  • Make sure to grease and flour the baking dish before pouring in the batter to prevent the cake from sticking.
  • For a moister cake, use buttermilk instead of milk in the batter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes before using.
  • Be careful not to overmix the batter, as this can result in a tough cake.
  • Bake the cake until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it, as this will help the frosting to set properly.
  • For a creamier frosting, use whipped cream instead of milk in the frosting recipe.
  • If you don't have whipped cream, you can make your own by whipping 1 cup of heavy cream until stiff peaks form.
  • Feel free to decorate the cake with your favorite toppings, such as sprinkles, chopped nuts, or fruit.

Conclusion:

This Weight Watcher Sunshine Cake is a delicious and refreshing treat that is perfect for any occasion. It is light and fluffy, with a tangy lemon flavor. The frosting is creamy and smooth, and the combination of the cake and frosting is simply irresistible. With only 2 points per serving, this cake is a great way to satisfy your sweet tooth without derailing your weight loss goals.
