12 graham crackers, made into crumbs (2 1/2 inch squares)
2 cups light cream cheese
1 cup fat free sour cream
1/2 cup sugar
2 teaspoons vanilla extract
2 large eggs
2 teaspoons grated lemon zest

Steps:

  • Prheat the over to 325 degrees; wrap the outside of a 10-inch springform pan with heavy duty foil; then spray the inside entirely with nonstick spray. Press the graham cracker crumbs over the bottom and partially up the sides of the pan.
  • In a large bowl, with an electric mixer on medium speed, beat the cream cheese, sour cream, sugar and vanilla until smooth.
  • Add the eggs, 1 at a time, beating on low speed until blended; stir in the lemon zest.
  • Pour the batter into the springform pan and set into a large roasting pan.
  • Pour boiling water into the roasting pan to come halfway up the sides of the springform pan.
  • Bake until almost completely set, 30-32 minutes.
  • Turn off the oven and prop open the door with a wooden spoon; leave the cake in the oven for 30 minutes.

A few weeks later I picked up the weight watchers cook book, and this tastes EXACTLY like what was at Applebees. Only difference is the strawberry sauce, which I topped with what I like better: blueberries. XD Hubby loves this cheesecake, it's his favorite. And at 128 calories a piece, it's just about guilt free!

2 c crushed sugar-free cookies
1 pkg splenda
1 tsp ground cinnamon
5 Tbsp light butter, melted
FILLING
2 pkg (8oz) fat-free cream cheese, softened
1 c fat-free sour cream
1/2 c sugar
1 Tbsp light brown sugar
8 pkg splenda
1 tsp vanilla extract
1 can(s) (15 oz) pumpkin puree
2 tsp pumpkin pie spice
1/2 tsp ground cinnamon
4 large eggs, beaten
lite cool whip topping, for garnish

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. To make the crust, mix the ingredients until crumbly. Pat into a 9-inch springform pan, forming the crust along the bottom and up the sides. Set aside.
  • 3. To make the filling, beat the cream cheese, sour cream, granulated and brown sugars, sweetener, and vanilla extract with an electric mixer until smooth. Add the pumpkin puree and the spices and blend. Add the eggs one at a time and blend again until mixed. Pour into the pan over the crust.
  • 4. Bake for 40-45 minutes, until the center is almost set.
  • 5. Turn the oven off and leave the cheesecake in the oven for an additional 30 minutes.
  • 6. Remove from the oven and let cool. Refrigerate for several hours, until the cheesecake cools completely and firms.
  • 7. To serve, run a knife or metal spatula around the sides of the pan to loosen the cake, and remove the pan. Garnish with a dollop of Lite Cool Whip.

1/2 cup walnuts, chopped
1 egg

1 cup flour

  • Preheat the oven to 350 degrees F. Beat the margarine and brown sugar until light and fluffy. Add the walnuts and flour; mix well.
