I love this recipe and would recommend to anyone who loves an elegant tilapia dish. It's easy and impressive. This recipe can be easily doubled for a dinner party. I like to serve with crusty Italian bread and sometimes I'll serve it with rice on the side, too.

PENNE WITH SPINACH AND WHITE BEANS

PENNE WITH SPINACH AND WHITE BEANS image

Categories     Bean     Pasta     Vegetable     Dinner

Yield 4 servings

Number Of Ingredients 11

1/2 lb whole wheat penne
1 TB red chili oil
4 large cloves of garlic, minced
1 10 oz. package frozen spinach, defrosted
2 TBS balsamic vinegar
1 tsp red pepper flakes (or more, to taste)
1 tsp dried oregano
1 tsp salt
1 15 oz. can of cannellini (or other small white) beans
Good quality olive oil
2 oz. Pecorino Romano cheese, grated

Steps:

  • Bring salted water to a boil. Cook pasta a minute or two less than package directions. Drain, reserving a couple cups of the pasta water and set aside. Meanwhile, heat chili oil in a large saucepan over medium-high heat. Once hot, add garlic and stir for a few minutes. Add spinach (do not squeeze water out of spinach, and don't worry about defrosting it 100%, most of the way is okay), vinegar, and spices (do yourself a favor and don't taste it at this point, the vinegar will taste too strong-it needs time to reduce and mellow). Cook for about five minutes, stirring often. Add cannellini beans, and cook about five minutes more, stirring occasionally. Add pasta and a ladleful of the reserved pasta water. Stir a few minutes until everything is heated through and liquid has thickened a bit. Taste and adjust seasonings as necessary. Stir in a bit of olive oil (a tablespoon or so) and heat through. Turn off heat and stir in cheese. After plating, shave a bit more cheese on each serving.

MASHED WHITE BEANS WITH SPINACH, GARLIC, AND LEMON

Mashed White Beans with Spinach, Garlic, and Lemon image

10 minutes to pure bliss. This deceptively simple dish comes together uber quickly. And though it might not be much to look at, trust me. It tastes utterly divine.

Provided by Kare for Kitchen Treaty

Time 10m

Number Of Ingredients 7

2 tablespoons olive oil plus more for drizzling over the top
2 cups packed baby spinach (roughly chopped)
2 teaspoons minced garlic (about 2 medium garlic cloves)
1 lemon (medium size will do, zested and halved)
2 cups cooked cannellini beans (or 1 15-ounce can, drained)
1/4 teaspoon kosher salt or sea salt (plus more for sprinkling on top)
Freshly ground black pepper

Steps:

  • Pour 2 tablespoons olive oil into In a medium saute pan over medium-high heat. Add the spinach, garlic, and lemon zest. Saute, stirring occasionally, until spinach is wilted, about 1 minute.
  • Add the beans, 1/4 teaspoon kosher salt, and a couple turns of freshly ground black pepper. Mash beans with a fork until the consistency of (very) lumpy mashed potatoes.
  • Divide between two bowls (or just pile them into one bowl and keep them all to yourself). Squeeze a lemon half over each serving, drizzle with olive oil, and sprinkle with a little more salt and pepper to taste. Serve at once.

Tips:

  • Soak the beans overnight. This will help to reduce the cooking time and make the beans more digestible.
  • Use a variety of beans. White beans are a classic choice, but you can also use black beans, kidney beans, or chickpeas. Experiment with different types to find your favorite.
  • Add vegetables to your soup. This will make it more nutritious and flavorful. Some good options include carrots, celery, onions, garlic, spinach, and kale.
  • Season your soup to taste. Salt, pepper, and garlic powder are all good choices. You can also add other herbs and spices to taste.
  • Serve your soup hot. This is the best way to enjoy its flavor and warmth.

Conclusion:

White bean and spinach soup is a delicious and healthy meal that is perfect for a cold winter day. It is also a great way to use up leftover beans. With a few simple ingredients and a little bit of time, you can make a pot of soup that the whole family will love.
