With kids coming in ready for a snack after school, I searched my pantry to see what I could toss together. No chocolate, no cookies, no staples to bake. I did have a few graham crackers, and some butterscotch chips, coconut, pecans. I saw minimarshmallows. A little toffee cooked up to hold it all together and Chewy Gooey Graham...

Steps:
- 1. Heat oven to 350ᴼ. It is best to have all ingredients measured and ready before you begin making bars. These are quick and easy to make! Line graham crackers in the bottom of a 10x 15 inch jelly roll pan. Make sure to fill in the bottom, cutting crackers to fit if you need to so that the bottom won't have gaps. Sprinkle mini-marshmallows evenly over the graham crackers.
- 2. Combine butter, brown sugar, cinnamon and vanilla in a saucepan. Cook at medium heat, stirring constantly until mixture is well blended, about 4 to 5 minutes. Pour evenly over marshmallows.
- 3. Sprinkle with coconut, butterscotch chips, and pecans. Bake for 10 minutes or until lightly browned. Cool completely. Cut into bars. Makes 48 bars.
- 4. To make these Wheat or Gluten Free, use Gluten Free Graham Crackers and make sure all other ingredients are GF too!
