Chocolate Dipped Cranberry Cookies image

This recipe is from Ocean Spray Cranberry awhile back -I got this recipe from the Ocean Spray processing/distribution store here in Las Vegas.. before they closed the viewing process window.. there was a wonderful gift shop- I also bought some cranberry wine vinegar.The lobster bottle shape won the 1992 Clear Choice Award for...

1 c butter or margarine ,soft
1 c granulated sugar
1 tsp vanilla
1 large egg
2 c all purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1 1/2 c semisweet chocolate chips, melted or white chocolate chips
1 1/4 c chopped nuts
2 c fresh or frozen cranberries, chopped
1 or 2 dash(es) red food coloring if desired, for christmas
1 splash of cramberry wine vinegar or cranberry juice

Steps:

  • 1. Preheat oven to 350^. Spray cookie sheets with non stick vegetable spray. (This photo just shows the lobster shaped bottle)
  • 2. Using an electric mixer, beat butter and sugar together in a medium bowl until light and fluffy. Add cranberry vinegar or juice( and food coloring if using) and egg, mix well. (Photo shows cookie with food coloring.)
  • 3. Combine flour, baking powder in a separate bowl. Add a little flour mixture to the cranberries to coat lightly . Add remaining flour mixture to butter mixture; mix until a soft dough forms. (Photo shows cookie dipped with white chocolate)
  • 4. Stir in cranberries. Drop by rounded teaspoonfuls onto cookie sheets. Bake 10 minutes or until golden brown. Transfer cookies to wire rack to cool completely. Dip half of each cookie into the melted chocolate of your choice and then in nuts ,colored sugars or coconut. Place on wax paper to dry completely.
