Date Drop Cookies image

These cookies are very moist and delicious! You may use Pecans or English Walnuts for the nuts. My friends and I like them with Pecans. If you wish to make these healthier you can substitute 3 cups of whole wheat flour for 3 cups of the white flour.

8 Tbsp boiling water
1 lb chopped and pitted dates
2 c shortening
2 c dark brown sugar
1 c white granulated sugar
2 tsp baking soda
4 large eggs (beaten)
6 c white flour
1 tsp salt
2 tsp vanilla
2 c coarsely chopped pecans or english walnuts

Steps:

  • 1. Pour boiling water over dates, set aside. Cream shortening and sugars. Beat in eggs. In a separate bowl sift together the dry ingredients. Combine the dry ingredients to the wet mixture. Drain excess water from dates, stir in the vanilla. Add dates and nuts to cookie dough. Drop by rounded teaspoons onto a greased cookie sheet. Bake in a preheated 350 degree F oven for 12 minutes.

I tried this recipe and the cookies turned out a little dry. I think I might have overcooked them. But the flavor was still good. Next time I'll try baking them for a shorter amount of time.

These cookies are heavenly! I made them for a party last weekend and they were a huge hit. They're so easy to make and they taste amazing. The dates give them a chewy texture and the nuts add a nice crunch. I'll definitely be making these again soon.
