Steps:
- Bring earth balance(butter/vegetable spread) to room temperature. Preheat oven to 400 degrees. Mix butter,sugar, vanilla and egg in a large bowl until smooth. Slowly pour in Trader Joe's pumpkin bread flour and mix into a dough. Roll the dough along the inside of the bowl to form a large ball. Cover the bowl, and chill the dough for atleast an hour. Come back, and shape the dough into tablespoon sized small lumps. ( approx. 1/3 of the dough will make 12 cookies) Place on a cookie sheet about 2 inches apart, and bake 10-15 minutes. This will make them brown on the bottom, crunchy around the edges and soft in the middle.
