Ensalada De Manzana (Apple Salad) image

A sweet salad traditionally served in Mexico for Christmas or New Year's Eve dinner as one of many desserts. Kids love it. Any apple works fine, but I prefer crunchy apples that aren't too sweet or tart such as Gala or Golden Delicious.

5 apples, diced
1 (16 ounce) can pineapple chunks, drained 1 cup syrup reserved
1 cup raisins
1 cup pecans, coarsely chopped
1 (16 ounce) container sour cream

Steps:

  • Combine all the ingredients except reserved syrup in a large bowl. Add syrup to taste if the salad looks too dry. Refrigerate for 30 minutes and serve.
