Grilled Sweet Potato Salad image

Adapted from Vegetarian Times 2005 Grilled sweet potatoes require close attention - but the results are worth it. Slice them too thick, and they won't cook through; slice them too thin, and they will char quickly. Slice carefully and keep an eye on the grill.

Grilled sweet potatoes bring such a wonderful smokiness to the salad. I also loved the addition of fresh herbs and creamy goat cheese.

This recipe deserves 10/10 rating! The flavors of grilled sweet potatoes, arugula, goat cheese and dressing go perfectly together. I substituted pecans for walnuts and it was equally delicious.
