Jello Cake image

This cake is a favorite of everyone who likes jello and/or cake, which I think is about every one I know. It is easy to make and could be dressed up or down depending on the occasion you'll serve it at. You can use the cake recipe I have here or any cake mix of your choice.

FOR THE CAKE
2 large eggs
1 1/2 c all purpose flour
1 c sugar
1/2 c milk
1/2 c butter, room temperature
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
FOR THE JELLO AND TOPPING
1 large box of jello
3 1/2 c water
2 large bananas

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a cake pan with baking spray. You can use any shape cake pan you like (round, bundt, loaf). The only thing that is important is that the pan is big enough that when the cake is baked, it is lower than the rim of the pan by about an inch.
  • 2. In a mixing bowl, mix all the cake ingredients together. Beat with an electric mixer at high speed for 2 minutes. Pour into the prepared pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean. Cool slightly in pan, then invert onto a cooling rack and cool completely.
  • 3. While the cake is baking prepare the jello according to package direction. Set aside on the kitchen counter (DO NOT REFRIGERATE).
  • 4. In the same cake pan slice the bananas and arrange on the bottom of the pan. Pour enough jello just until the banana slices start to float. Refrigerate this jello layer until it is set. (DO NOT REFRIGERATE THE REST OF THE JELLO)
  • 5. Take the pan out of the fridge, and carefully return the cake to the pan on top of the jello banana layer. Slowly pour the rest of the jello all over the cake so that it all gets well moistened by the jello. Refrigerate until jello is set.
  • 6. When Jello is set take the cake out of the fridge and dip the pan into hot water for a few seconds then invert it onto your serving plate.
  • 7. SOME SUGGESTIONS: You can decorate it with whipped cream if you like. Any fresh or drained canned fruits could be substituted for the bananas, or no fruit at all if you prefer.
