MARINATED CARROT SALAD image

2 pounds of carrot slliced into coins.
1 onion sliced thin
2 green peppers sliced thin
1/2 cup sugar
1/2 cup canola oil
1/2 cup vinegar
1 tsp mustard
1cup tomato soup
salt and pepper

Steps:

  • 1) Slightly cook carrots 2) Combine all other ingredients in a bowl with carrots and refrigerate at least 5 hours or overnight This will keep in the fridge for weeks.
