NACHO GRANDE CASSEROLE image

A friend of mine at work made this for a pot luck last year and it was so good, I wanted to share it with everyone.

Number Of Ingredients 9

2 lb ground beef
1 onion, chopped
15 oz can(s) tomato sauce
2-16 oz can(s) spicy chili beans
1-1/4 oz pkg taco seasoning mix
16 oz pkg frozen corn, thawed
8 oz pkg finely shredded cheddar jack cheese, divided
9 oz pkg nacho-flavored tortilla chips, crushed and divided
optional: sour cream, chopped tomato, chopped green onion

Steps:

  • 1. Brown ground beef and onion in a Dutch oven and drain. add tomato sauce, beans, seasoning mix and corn and stir until blended. Simmer over medium heat for 10 minutes.
  • 2. Pour half of beef mixture into a greased 13" x 9" baking dish. Top with half each of the cheese and crushed chips; repeat layers.
  • 3. Bake at 350 degrees for 25-30 minutes, until bubbly and golden.
  • 4. Top portions with a dollop of sour cream and a sprinkling of tomato and green onions, if desired. Serve with avocados, warm tortilla, rice and/or beans.
