Perfect Pumpkin Bars image

My mom has had this recipe forever and now that I'm a mom, they are always requested by my husband, kids, and inlaws around the holidays!

Time 1h5m

Number Of Ingredients 14

2 c flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
4 eggs (room temp)
1 can(s) pumpkin (15 oz)
1 2/3 c sugar
1 c vegetable oil
CREAM CHEESE FROSTING (I ALWAYS DOUBLE IT!)
1- 8 ounce pkg cream cheese softened
1/4 c butter, softened
1 tsp vanilla
2 c powdered sugar

Steps:

  • 1. Mix flour, baking soda, baking powder, salt and cinnamon and set aside.
  • 2. Beat sugar, pumpkin, oil, and eggs until well incorporated.
  • 3. Gradually add dry ingredients into pumpkin mixture until fully incorporated.
  • 4. Pour mixture into an ungreased 15x10x1 pan and bake at 350 degrees for 25-30 minutes. Let cool completely before frosting.
  • 5. For the cream cheese frosting: Beat together butter, cream cheese, vanilla until incorporated. Gradually add powdered sugar, and taste as you go. I like my frosting a little less sweet so I end up using less than the full amount of powdered sugar. Once frosted, I garnish with cinnamon on top. Enjoy! (I died the frosting orange in the picture for Halloween and topped with fresh ground cinnamon)

These bars were a bit too dry for my taste. I think I might try adding some extra butter or oil next time.

I'm not a big fan of pumpkin, but these bars were actually really good. They're not too sweet and the pumpkin flavor is subtle. I would definitely make them again.
