Pikelets With Cinnamon Apple Slices image

Delicious plain pikelets with a cinnamon applesauce. The sauce is a bit different because of the slicing of the apples. One or two pikelets makes a very nice dessert with a spoonful of vanilla ice cream! If using non hydrogenated margarine for the pancakes and sauce, such as Becel, use a little less because of the higher moisture content. Recipe altered from Apple & Pear Australia Ltd.

1 cup self raising flour
2 tablespoons caster sugar or 2 tablespoons sugar
1 egg, lightly beaten

I was disappointed with these pikelets. They were dry and bland, and the cinnamon and apple slices didn't add much flavor. I won't be making them again.

These pikelets were a bit too sweet for my taste, but they were still good. I think I'll try making them again with less sugar next time.

I tried making these pikelets today and they turned out perfectly! I was worried the cinnamon and apple slices would be too overpowering, but they were actually a perfect balance of flavors. Definitely a new favorite recipe!
