Steps:
- 1. Heat the bechamel and pour over the cheese to melt. Stir these two ingredients together to incorporate.
- 2. In a saute pan sweat the onions until soft then add to the cheese sauce. Mix all the wet ingredients and season then fold in the potatoes. Be careful not to break apart the potatoes.
- 3. Pour into a baking dish and bake at 350 for 25 minutes or until golden brown and the cheese is bubbling.
