Steps:
- mix togehther the soy sauce and corn flour in a large bowl, stir in the beef strips and leave to marinate for 1-2hours heat half the oil in a wok. Add the garlic and ginger and fry until fragrant. Stir in the strips of beef. Stir to seperate the pieces, allow them to colour and cook for 1-2 minutes. Remove from the pan and set aside. Heat the remaingiing oil in the wok. Add your selection of mushrooms, and cook until tender. Return the beef to the wok with the mushrooms. Add the oyster sauce, sugar, and freshly ground black pepper to taste. Mix well. Add the spring onions. Mix together serve garnished with the strips of red chilli
