YELLOW SQUASH FRITTERS

Yellow squash Fritters image

This was given to me by a member of our church. I was looking for other ways to fix our fast growing squash.

Number Of Ingredients 8

2 yellow squash, grated
1/2 c chopped green pepper
4 Tbsp corn meal
1-2 eggs (depending on how moist your squash is)
2 Tbsp sugar or splenda
1/2 c chopped onions
2-3 Tbsp flour
salt and pepper and garlic to taste

Steps:

  • 1. Mix everything together add one egg at a time you may not need two. Place in pan by spoonfuls if they are high in the middle slightly flatten with the back of the spoon. Fry in hot oil until light brown Don't leave these for a second they will burn fast...
