ZUCCHINI NUT BREAD image

3 cups plain flour
2 tsp cinnamon
1 tsp. baking soda
1 tsp. salt
¼ tsp baking powder
3 eggs
2 cups sugar
1 cup oil
1 tablespoon vanilla
2 cups unpeeled, grated zucchini
½ cup chopped nuts

Steps:

  • Sift together flour, cinnamon, baking powder, salt and soda. Beat eggs well and gradually add sugar and oil. Add vanilla and dry ingredients. Stir in zucchini. Add nuts. Pour into 2 greased loaf pans. Bake at 350* for 1 hour, or a little less. Cool in pans a few minutes, remove from pans and cool on wire rack. May be frozen.

This bread was a bit too dry for my taste. I think I should have added more oil or butter to the batter. The flavor was good, but I would have liked it to be more moist.
