ARMENIAN PICKLES (TOURSHI)

Armenian Pickles (Tourshi) image

Spicy and delicious dill vegetable pickles. They are easy to make...I usually make a 5 gallon jug in the fall and give them away to my friends. They are usually ready by Thanksgiving. You can also use kirby cucumbers, peppers, hot or sweet, green tomatoes or any combination you like.

Yield 8 quarts, 32 serving(s)

Number Of Ingredients 11

2 large heads cauliflower, cut up into florets
1 large head of cabbage, cut into wedges
1 lb carrot, peeled and sliced
1 lb green beans
1 head garlic, divided
16 large dill sprigs, divided
4 tablespoons whole mixed pickling spices, divided
3 quarts water
1 quart white vinegar
1 cup kosher salt
1 teaspoon turmeric

Steps:

  • Sterilize 8 large mouth quart jars and lids.
  • Prepare vegetables and divide among eight quart jars .I use raw vegetables because I like the crunch. Stuff jars tightly with vegetables, adding carrots and green beans into the corners, pushing down with a wooden spoon. Put two sprigs of dill and two cloves of garlic in each jar with one or more teaspoons of pickling spice, to taste.( I use about 1-1/2 tsps.) Add one or more hot peppers to each jar if you like spicy pickles.
  • Boil water, vinegar, salt and turmeric.
  • Pour into each jar to fill and seal.
  • Store in a cool dry place for four to six weeks.

Yield 3 quarts

Number Of Ingredients 16

FOR THE PICKLING SOLUTION:
4 1/2 c white vinegar, distilled
3 c water
1/3 c salt
1/4 c sugar, or more to taste
1 tsp onions seeds, black (sev gundig; optional)
1 tsp oregano, dried
1 tsp peppercorns, black
1/2 tsp turmeric, ground
FOR THE VEGETABLES:
1 head cauliflower, cut into bite-size florets
8 oz carrots, peeled and cut into 1-inch pieces
4 rib celery, medium, cut into 1-inch pieces
1 turnips, cut lengthwise in half, then crosswise into 1/4-inch slices
1 onion, cut into 1/4-inch slices
3 clove garlic, peeled

Steps:

  • 1. Combine the vinegar, water, salt, sugar, black onion seeds (if using), oregano, peppercorns, and turmeric in a large jar. Cover the jar tightly and shake until the sugar is dissolved. 2. Add the cauliflower, carrots, celery, turnip, onion, and garlic to the jar and stir. Correct the seasoning, adding sugar to taste. Press a piece of plastic wrap directly on top of the mixture to keep the vegetables submerged. Cover the jar, placing another piece of plastic wrap between the mouth of the jar and the lid (to prevent the vinegar from corroding the metal lid). Let cure, at room temperature or in the refrigerator, for at least 3 days; the torshi will keep, tightly covered in the refrigerator, for several weeks.

¼ cup canola oil, divided
1 large yellow onion, finely chopped
1 teaspoon ground turmeric
1 ½ pounds boneless chuck roast, cut into 1 1/2-inch cubes
1 ½ cups finely chopped spinach
1 cup finely chopped green onions (green part only)
½ cup finely chopped Italian flat-leaf parsley
¼ cup finely chopped cilantro
¼ cup finely chopped chives
¼ cup finely chopped fenugreek leaves
1 ½ cups water, or more as needed

  • Stir spinach mixture into the onion and chuck mixture. Pour in enough water to create a slurry consistency. Season with salt and pepper. Pour in lemon juice. Reduce heat, cover, and simmer stew until greens soften, about 1 hour.

Yield 6

Number Of Ingredients 19

2 cups sella basmati rice
5 cardamom pods, divided
1 onion, peeled and halved
1 whole head garlic, loose skins removed
5 whole cloves, divided
2 teaspoons ground black pepper, divided
2 teaspoons cumin seed, divided
1 teaspoon salt
1 teaspoon white sugar
1 cinnamon stick
1 teaspoon paprika
1 teaspoon coriander seeds
3 ½ cups water
1 tablespoon canola oil
1 onion, chopped
1 cup carrots, chopped into matchstick pieces
3 cloves garlic
½ cup raisins
½ cup slivered almonds

Steps:

  • Soak the rice in cool water for 5 minutes. Rinse until water runs clear.
  • Place 4 cardamom pods on a cutting board and lightly crush using the flat side of a knife; transfer to a pressure cooker. Add halved onion, garlic head, 4 cloves, 1 teaspoon black pepper, 1 teaspoon cumin seed, salt, sugar, cinnamon stick, paprika, and coriander seeds. Pour in water to cover.
  • Seal pressure cooker lid and turn heat to high. Cook until pressure cooker whistles once, about 5 minutes. Reduce heat to medium. Wait for 2 more whistles, about 20 minutes. Remove from heat and allow pressure to release naturally, about 10 minutes.
  • Strain broth into a bowl. Clean out the pressure cooker and heat it over medium heat. Add oil and chopped onion; cook and stir until softened and browned, about 7 to 10 minutes. Add carrots; cook until soft, about 3 minutes more. Add raisins, almonds, and strained rice. Add remaining 1 teaspoon black pepper, remaining 1 teaspoon cumin seed, and remaining clove.
  • Crush remaining cardamom seed to a powder and add to the pressure cooker. Mix to combine; pour in enough broth to cover the rice.
  • Increase heat to high and seal the pressure cooker. Cook until the first whistle, 5 to 7 minutes. Reduce heat to medium. Cook for 5 minutes and remove from heat. Let rest for 7 minutes; release the pressure naturally, about 10 minutes. Transfer cooked rice to a serving dish immediately to prevent overcooking.
