1 tablespoon sugar
½ teaspoon cinnamon
1 teaspoon lemon juice
2½ tablespoons all-purpose flour
¼ teaspoon sugar
pinch of salt
1 tablespoon salted butter (, chilled - plus 1 additional tablespoon butter, chopped to dot on top of apples)
1 teaspoon ice water

Steps:

  • Heat oven to 375 degrees F (190 degrees C).
  • Toss the apple slices into a large bowl and stir in the sugar, cinnamon and lemon juice. Let sit while you prepare the dough.
  • In a small bowl, combine the flour, sugar and salt.
  • Using a fork, cut in the butter until the mixture resembles wet sand.
  • Add the water and stir to form dough.
  • Transfer the dough to a cutting board and roll into a ball.
  • So the dough doesn't stick, sprinkle a little flour on the cutting board and on the ball of dough and using a roller or a large glass, roll out the dough to form a circle.
  • Lightly oil a small tart or pie pan. Fit the crust into the pan. Poke the bottom of the pie crust with a fork a few times.
  • Pour in apples and dot with butter.
  • Bake for 20 minutes or until crust is golden brown.

While this recipe is good any time it is the first one requested when the fall apples ripen. It was passed to me by a family member. The recipe calls for an 8x8 deep baking pan. Family member uses a corning ware casserole dish for the baking which makes for a lovely dessert. I often bake it in a pie plate and when cool slice and serve as you would pie. Using white sugar in the crumb crust has it so tasting like pastry. Quick and easy to make. NOTE - recently found this recipe from an old family cookbook is called aunties 'Old Fashioned Crumb Cake' and calls for baking in a 425 oven for 40 to 50 minutes or until brown and crisp. Just made it and found baked at the higher temperature it very like an apple crisp - an absolutely delicious version of Almost Apple Pie and another great apple dessert to serve family and friends. Ovens vary - I used a slightly lower oven temp.

1 1/2 cups flour
5 cups sliced apples

This recipe includes an ingredient called free-flowing brown sugar. This is a non-clumping or caking version of ordinary brown sugar. It has a lower moisture content then the traditional one, which makes it free flowing much like granulated sugar. It is available at most specialty supermarket. If it is not available in your part of the world, use regular brown sugar and make sure it is broken up, free of clumps. Macintosh or Granny Smith apples are the best choices for apple pie because they are the least mushy apples.

1 cup white sugar
½ cup brown sugar
