- Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.
- Preheat the oven to 350 degrees F.
- Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.
- Bake for 50 to 55 minutes or until the custard reaches 165 to 180 degrees. Remove from oven and cool. Keep refrigerated after cooling.
MOO-LESS CHOCOLATE PIE
Steps:
- Place enough water in the bottom of a 4-quart saucepan to come 1 inch up the sides. Bring to a simmer over medium heat.
- Melt the chocolate chips with the liqueur and vanilla in a medium metal bowl set over the simmering water, stirring often with a rubber or silicone spatula. Combine the tofu, chocolate mixture and honey in a blender or food processor and spin until smooth, about 1 minute. Pour the filling into the crust and refrigerate for 2 hours, or until the filling sets firm.
- Preheat the oven to 350 degrees F.
- Spin the cookies and sugar in a food processor until fine crumbs. Then drizzle in the butter, pulsing to combine. Press this mixture firmly and evenly into the bottom, up the sides and just over the lip of a 9-inch metal pie pan.
- Bake on the middle rack of the oven until crust is set and appears dry, 18 to 20 minutes. Remove from the oven and cool completely, about 1 hour.

Steps:
- Cut bacon strips in half, lengthwise, then crosswise in 1/4 inch pieces.
- Cut onions in half, then 1/4 thin slices.
- Preheat oven to 375°F.
- Cook bacon in 12-inch nonstick skillet over medium heat until brown and crisp (8-10 minutes). Remove bacon from pan.
- Add olive oil to skillet. Keep at medium heat. At onions, salt and thyme to skillet. Cover and cook until onions release liquid and start to wilt (approx 10 minutes).
- Reduce heat and continue to cook covered, until onions are very soft (approx 15 minutes), stirring once or twice. Uncover. If onions look wet, let cook uncovered for 5 minutes.
- While onions are cooking, bake the pie shell for 8 to 10 minutes. Also while onions are cooking, whisk eggs, milk, coconut oil and pepper.
- When onions are done, remove the thyme. Stir onions into egg mixture until just incorporated. Poor onion mixture into pie crust. Sprinkle with bacon.
- Place pie on baking sheet. Bake until center of pie feels firm to touch (20-25 minutes). Cool on a wire rack for 10 minutes before serving.

DAIRY FREE CHOCOLATE CREAM PIE
My Mother In-Law taught me how to make this for my daughter who is on a GF/DF diet. She came up with this recipe herself! It was very easy and the pie held up very well. I used the "Silk" brand Chocolate Soy milk and I even had a piece of it and it was so delicious! We doubled the recipe to make two pies, as my Brother In-Law is lactose intolerent as well. We also used the nabisco brand chocolate and shortbread ready to use pie crusts, so it was very easy! *Note* When I wrote out the ingredients, I mistakenly put the instant pudding mix, but this recipe uses the Cook and Serve pudding mix. Also as another note, the chocolate pie filling is Gluten Free, but the pie shell was not, so if you want to keep it gluten free, you'll want to probably make your own from other recipes that you may know of, as I don't know of one right now. *Update* I had this recipe named gluten free and sugar free in the title of the recipe but seeing that chocolate soymilk has sugar and that the pie crust does include gluten flour, I have changed the name to just Dairy Free Chocolate pie. Hope this doesn't confuse anyone! Enjoy!!

- In a medium size saucepan, pour the cold chocolate soy milk into the pan. Do not turn on the stove yet, but add two packets, or about 4 tbsp, of the plain gelatin and stir. Allow it to sit in the cold milk for about 5 minutes or so.
- Turn on the stove to Med/High and add chocolate pudding mix.
- Stir well and stir constantly with a wire whisk, which should take about 7 minutes or so.
- When the pudding mixture comes just to a boil, pour the pudding into the ready pie crust. If there is any pudding left in the pan, pour into a small dish, and someone can have some pudding!
- Cover the pie the some saran wrap. This will help because there will be a "film" that will adhere to the top of the pie if not, so this keeps the pie fresh.
- Allow the pie to completly cool, which should take at about 3 hours or so. Chill for at least 2 hours. Serve Chilled with whipped cream!

I am happy to present this decadent and (yes!) healthy recipe for an awesome dessert which I made for Christmas dinner 2011, not knowing what it would taste like. "Oh my!" I would never have guessed it wasn't totally sinful if I didn't already know. You rarely can go wrong w/an Alton Brown recipe, so I knew it'd be good, just not *this* good! Silken tofu: where have you been all my life?!? Note: I have made a few minor adjustments to ingredients and order of incorporation, which worked better for me, and hopefully will for you, too. - In the bowl of a food processor, combine the flour, baking powder and salt. Pulse for a few seconds and then pour into a large mixing bowl.
- Add the shortening and knead it into the flour with your hands until it is crumbly. Add the milk all at once and mix in with a spatula until it begins to come together.
- Lightly flour your hands and the countertop and turn the dough out onto the countertop. Knead the dough ball, folding over 10 to 20 times. Using a rolling pin roll the dough to 1/3 to 1/2-inch thickness, then cut into rounds using a 2 1/4-inch ring. Roll each round as thinly as possible or to 5 to 6 inches in diameter.
- Spoon 1 to 2 tablespoons of filling onto the dough, brush the edges of half of the dough lightly with the egg wash, fold over and seal the edges together with the tines of a fork, dipping it into flour as needed.
- Gently press down to flatten and evenly distribute the filling and snip or cut 3 slits in the top of the pie. Dock pies that are going to be deep-fried, instead of snipping or cutting slits.
- TO PAN FRY PIES: Place a medium saute pan over medium low heat along with 1 to 2 tablespoons vegetable, canola oil or butter.
- Once heated, place 2-3 pies at a time into pan & saute until golden on both sides, about 3-4 minutes per side. Allow to cool 4 to 5 minutes before serving.
- TO DEEP FRY PIES: Heat vegetable oil in a deep-fryer or a large heavy pot to 375 degrees F. Once hot, add 1 to 2 pies at a time and fry until golden brown, approximately 3 to 4 minutes.
- TO BAKE PIES: Preheat the oven to 350 degrees F. Place finished pies onto an ungreased cookie sheet. Bake for 25 to 30 minutes or until golden brown.
- TO MAKE TOASTER PASTRIES: Preheat oven to 350 degrees F. Divide dough in half and roll out to less than 1/8-inch thick. Cut into 4 inch by 5 inch rectangles.
- Place 1 to 2 tablespoons of filling onto center of one piece of dough. Brush the edges with egg wash and top with second piece of dough. Seal edges by pressing together with tine of fork. Gently press down to flatten and evenly distribute the filling and dock the top of the pie. Repeat with second half of dough. Bake for 20 minutes.
- Remove from the oven, allow to cool completely and place into zip-top bags until ready to toast. The pies will not be brown until toasted.
- MANGO FILLING: Place all of the ingredients into a small saucepan over high heat and bring to a boil. Reduce the heat to low, cover and simmer for 30 minutes, stirring occasionally.
- Transfer to a bowl and place in refrigerator to cool completely before using as filling. For each pie place 1 to 2 tablespoons onto the center of the dough. Follow directions above.
- CHOCOLATE FILLING: Place the sugar, cocoa powder, and butter into a large zip-top bag and squish to combine. Cut a whole in 1 corner of the bag. For each pie, pipe 1 to 2 tablespoons of mixture onto the center of the dough. Follow directions above.
