7 -8 cups shredded green cabbage (about 1 head)
3 medium carrots, peeled and grated
3 medium fuji apples, peeled and coarsely grated
4 green onions, thinly sliced
2 tablespoons apple cider vinegar or 2 tablespoons white vinegar
2/3 cup sour cream
1/2 cup mayonnaise

  • Add dressing to cabbage mixture, season with salt and pepper and toss to combine.
  • Cover and refrigerate 1-2 hours before serving.

Tips:

  • Choose the right apples. Granny Smith apples are a good choice for this slaw because they are tart and crisp. You can also use other tart apples, such as Honeycrisp or Braeburn.
  • Use fresh poppy seeds. Fresh poppy seeds have a more intense flavor than dried poppy seeds. You can find fresh poppy seeds at most grocery stores.
  • Make the dressing ahead of time. The dressing for this slaw can be made up to 3 days in advance. This makes it a great option for a potluck or party.
  • Chill the slaw before serving. Chilling the slaw for at least 30 minutes before serving helps the flavors to meld and the slaw to become more crisp.

Conclusion:

Apple and poppy seed slaw is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be made ahead of time, making it a great option for busy weeknights. The combination of sweet apples, crunchy poppy seeds, and tangy dressing makes this slaw a surefire hit.
