APPLE MACAROON PIE

Apple Macaroon Pie image

My husband loves pies better than cakes so I try to find a lot of pie recipes to make for him. This is an interesting combination and he really liked it.

Provided by Bea L. @BeachChic

Categories     Pies

Number Of Ingredients 12

9" - unbaked pie shell
4 cup(s) apples, peeled, cored & sliced
1 tablespoon(s) self-rising flour
1/2 cup(s) granulated sugar
1/2 teaspoon(s) salt
1 tablespoon(s) butter or margarine
TOPPING:
1/2 cup(s) granulated sugar
1 tablespoon(s) butter or margarine, melted
3/4 cup(s) shredded coconut
1 - egg, beaten
1/4 cup(s) milk

Steps:

  • Preheat oven to 400. Rub a little egg white or milk on bottom of crust to prevent it from being soggy.
  • Place apple slices in bottom of pie shell. Combine the flour, sugar & salt then sprinkle over apples. Dot with the tablespoon of butter and bake on 400 for 20 minutes.
  • TOPPING: While pie is baking, prepare topping by combining the sugar, melted butter, coconut, egg and milk. Remove pie from oven and reduce temperature to 350.
  • Spread topping on hot pie and return to oven. Bake @ 350 an additional 30 minutes or until pie is done.

Tips:

  • Use a combination of almond flour and coconut flour for the crust. This will give the crust a nice balance of flavor and texture.
  • Toast the coconut flour before using it in the crust. This will help to bring out its flavor and make it more absorbent.
  • Use a food processor to grind the almonds and coconut flour into a fine powder. This will help the crust to come together smoothly.
  • Press the crust firmly into the pie plate. This will help to prevent it from cracking when baking.
  • Blind bake the crust before filling it with the apple mixture. This will help to prevent the crust from becoming soggy.
  • Use a variety of apples for the filling. This will give the pie a complex flavor and texture.
  • Peel and slice the apples thinly. This will help them to cook evenly.
  • Add spices to the apple filling for extra flavor. Common spices used in apple pie include cinnamon, nutmeg, and ginger.
  • Use a dollop of coconut whipped cream or a scoop of vanilla ice cream to top the pie. This will add a delicious and creamy finishing touch.
