Steps:
- Preheat oven to 350°F. Butter 11x7-inch glass baking dish. Whisk first 6 ingredients in large bowl to blend. Fold in bread, apple, and raisins. Pour batter into prepared dish. Bake pudding 30 minutes. Sprinkle with additional cinnamon. Bake pudding until top is golden and center is set, about 35 minutes longer.
- Spoon pudding into bowls. Top with vanilla ice cream and serve.
Tips:
- Choose a good quality bread: A stale or dry bread will not produce a good pudding. Use a fresh, soft loaf of bread, such as brioche, challah, or French bread.
- Soak the bread in the custard mixture: This will help to soften the bread and make it more flavorful.
- Use a variety of fruits: Don't just stick to raisins. Try using a combination of fruits, such as apples, pears, blueberries, and cranberries.
- Add some spices: A little bit of spice can really enhance the flavor of the bread pudding. Try adding cinnamon, nutmeg, or ginger.
- Don't overcook the pudding: The pudding should be set, but still slightly moist in the center. Overcooking will make the pudding dry and tough.
Conclusion:
Apple rum and raisin bread pudding is a classic dessert that is easy to make and always a crowd-pleaser. With its moist and flavorful bread, sweet and boozy apples, and plump raisins, this pudding is sure to be a hit at your next gathering. So next time you have some leftover bread, don't throw it away. Make apple rum and raisin bread pudding instead!
