Provided by Giada De Laurentiis

Categories     appetizer

Time 1h45m

Yield 6 to 8 servings

Number Of Ingredients 16

1 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon granulated sugar
3 tablespoons unsalted butter, cut into small pieces
1/2 cup mascarpone cheese
1 1/2 tablespoons lemon juice
3 tablespoons ice water
3 tablespoons unsalted butter, melted
4 small Granny Smith apples, peeled, cored, and cut into 1/4 to 1/2-inch thick slices
1/4 cup granulated sugar
3/4 teaspoon ground cinnamon
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/2 cup chopped walnuts
1/3 cup crumbled Gorgonzola
1 large egg, lightly beaten

Steps:

  • For the crust: In a food processor combine the flour, salt, and sugar. Pulse to combine. Add the butter and pulse until the butter is finely chopped and the mixture resembles a coarse meal. Add the mascarpone cheese and lemon juice and pulse a few times. Add the ice water and run the machine just until the mixture is moist and crumbly, but does not form a ball. Do not over mix. Turn the dough out onto a sheet of plastic wrap. Press into a disc, cover, and refrigerate for 30 minutes.
  • For the filling: Place an oven rack in the lower third of the oven. Preheat the oven to 400 degrees F. Melt the butter in a large nonstick skillet over medium heat. Add the apple slices, sugar, and cinnamon. Cook, stirring frequently, until the apples are softened, but not mushy, about 5 minutes. Set aside to cool for 10 minutes. Stir in the lemon juice, lemon zest, walnuts, and Gorgonzola.
  • Cut a piece of parchment paper to fit the inside of a 12 by 17-inch baking sheet and place on a work surface. Place the chilled dough on the parchment paper. Roll the dough out into an 11-inch circle, about 1/4-inch thick. Lift the parchment paper and transfer to the baking sheet. Spoon the apple filling into the center of the dough. Spread the filling evenly, leaving a 2-inch border. Fold the dough border over the filling to form an 8-inch round. Pleat the edge of the pastry and pinch to seal any cracks in the dough.
  • Using a pastry brush, brush the crust with the beaten egg. Bake until the crust is golden, about 25 minutes. Cool for 10 minutes before slicing and serving.

Time 46m

Yield 6 servings

Number Of Ingredients 13

1 cup all-purpose flour
2 tablespoons granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 pound (1 stick) very cold unsalted butter, diced
2 tablespoons ice water
1 1/2 pounds McIntosh, Macoun, or Empire apples (3 large)
1/4 teaspoon grated orange zest
1/4 cup flour
1/4 cup granulated or superfine sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice
4 tablespoons (1/2 stick) cold unsalted butter, diced

Steps:

  • For the pastry, place the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to combine. Add the butter and pulse 12 to 15 times, or until the butter is the size of peas. With the motor running, add the ice water all at once through the feed tube. Keep hitting the pulse button to combine, but stop the machine just before the dough becomes a solid mass. Turn the dough onto a well-floured board and form into a disk. Wrap with plastic and refrigerate for at least 1 hour.
  • Preheat the oven to 450 degrees F.
  • Flour a rolling pin and roll the pastry into an 11-inch circle on a lightly floured surface. Transfer it to a baking sheet.
  • For the filling, peel, core, and cut the apples into 8ths. Cut each wedge into 3 chunks. Toss the chunks with the orange zest. Cover the tart dough with the apple chunks leaving a 1 1/2-inch border.
  • Combine the flour, sugar, salt, cinnamon, and allspice in the bowl of a food processor fitted with a steel blade. Add the butter and pulse until the mixture is crumbly. Pour into a bowl and rub it with your fingers until it starts holding together. Sprinkle evenly on the apples. Gently fold the border over the apples to enclose the dough, pleating it to make a circle.
  • Bake the crostata for 20 to 25 minutes, until the crust is golden and the apples are tender. Allow to cool. Serve warm or at room temperature.

Number Of Ingredients 22

6 tablespoons unsalted butter
3 pounds Granny Smith apples peeled, cored, and cut into 3/4-inch cubes
1 teaspoon orange zest
1 1/2 teaspoons lemon zest
1/4 teaspoon coarse salt
1/2 cup sugar
3/4 cup all-purpose flour
1/4 cup packed dark-brown sugar
1/4 cup granulated sugar
1/2 teaspoon coarse salt
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1 stick cold unsalted butter, cut into cubes
2 1/2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon coarse salt
2 sticks, plus 1 tablespoon, cold unsalted butter, cut into small pieces
4 large egg yolks
3 tablespoons ice water
Flour, for parchment
1 large egg, beaten
Granulated sugar, for sprinkling

Steps:

  • To make the crust, mix flour, sugar, salt, and butter on medium speed until mixture resembles coarse sand. Add the yolks; mix slightly. Add ice water. Mix until just combined. Form dough into disk; wrap in plastic. Chill for 1 hour or up to 3 days.
  • To make the filling, melt butter in a large pan on high heat. Add apples, zests, and salt, stirring until coated. Sprinkle sugar, and saute, stirring, until sugar is dissolved, liquid has thickened, and apples are almost golden, about 5 minutes. Transfer to a baking sheet, and let cool to room temperature.
  • To make the crumb topping, combine flour, dark-brown sugar, granulated sugar, salt, cinnamon, allspice, and butter in a food processor, and pulse until mixture resembles coarse sand. Refrigerate until ready to use.
  • To assemble, preheat oven to 375 degrees and flour a piece of parchment paper. Roll chilled dough into a 1/4-inch-thick, 14-inch circle on parchment (trim excess). Place dough and parchment on cookie sheet. Mound cooled apple mixture in center, leaving a 3-inch border. Sprinkle crumb mixture on top of apples. Fold edges of the dough on top of apples, overlapping and leaving about a 6-inch round opening. Refrigerate until dough is firm, about 30 minutes. Brush edge of crust with egg, and sprinkle with sugar. Bake until pastry is golden brown and apples are tender, about 40 to 50 minutes. Serve warm or at room temperature, with vanilla ice cream.

AMAZING APPLE CROSTATA

Amazing Apple Crostata image

There's an Italian restaurant famous for their family-style eating. You'd think something as simple as apple pie wouldn't be as decadent or exotic as this, but you would be very, very wrong. I'm not a dessert lover but I took one of these home and ate it even after it was all soggy from melted ice cream and savored every morsel. There are no words for how good this is. This crust is to die for!

Categories     Desserts     Pies     Tarts     Fruit Tart Recipes

Time 1h35m

Yield 6

Number Of Ingredients 10

1 ¾ cups all-purpose flour
2 tablespoons white sugar
1 teaspoon salt
¾ cup chilled unsalted butter, cut into small pieces
2 tablespoons ice water, or more if needed
1 lemon, halved
6 small Gala apples, peeled and thinly sliced
½ cup white sugar
½ teaspoon ground cinnamon
2 teaspoons white sugar

Steps:

  • Mix flour, 2 tablespoons sugar, and salt together with an electric mixer until combined. Mix in butter until mixture resembles coarse meal. Add ice water, 2 teaspoons at a time, while the mixer is running until dough just holds together. • Wrap dough in plastic wrap and chill until slightly firm, 20 to 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Squeeze 1/2 the lemon over the apple slices to keep from browning.
  • Place a large piece of parchment paper on a flat work surface. Roll dough into a round 12 to 16 inches in diameter, 1/4 to 1/2-inch thick. Arrange apple slices in 2 layers on the dough, leaving a 1 1/2 to 2-inch border all around. Fold up the border, pleating the edge to make it fit; leave most of the apples uncovered.
  • Combine 1/2 cup sugar and cinnamon in a small bowl. Sprinkle over apples. Squeeze remaining 1/2 lemon over apples. Sprinkle 2 teaspoons sugar over crust. Transfer parchment paper to a baking sheet.
  • Bake in the preheated oven until crust is golden brown, 50 to 60 minutes.

Yield Makes 8 servings

Number Of Ingredients 15

Crust
1 cup all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch pieces
1 large egg yolk
1 tablespoon (or more) ice water
1/2 teaspoon vanilla extract
Filling
1/4 cup sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 1/2 pounds Fuji apples (about 3 large), peeled, quartered, cored, cut into 1/4 inch-thick slices
1 tablespoon unsalted butter, cut into small pieces
8 ounces sharp cheddar cheese, cut into 8 wedges

Steps:

  • For crust:
  • Mix flour, sugar, and salt in processor. Cut in butter, using on/off turns, until mixture resembles coarse meal. Whisk yolk, 1 tablespoon ice water, and vanilla extract in small bowl to blend. Add egg mixture to processor; blend until dough clumps together, adding more ice water by teaspoonfuls if dough is dry. Form dough into ball; flatten into disk. Wrap in plastic wrap; chill at least 1 hour.
  • Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim dough overhang to 1 inch; fold dough overhang in and press onto sides of pan. Pierce crust all over with fork. Refrigerate crust for 1 hour.
  • For filling:
  • Position rack in bottom third of oven and preheat to 400°F. Mix first 3 ingredients in bowl. Arrange apple slices in concentric circles in crust, overlapping and fitting tightly together. Sprinkle with sugar mixture. Dot with butter. Bake until apples are tender and beginning to brown and crust is golden, about 55 minutes. Cool tart in pan on rack at least 45 minutes. (Can be made 6 hours ahead. Let stand at room temperature.)
  • Serve tart slightly warm or at room temperature with cheese.

Tips:

  • Choose the right apples: Use a combination of tart and sweet apples for the best flavor. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • Don't overmix the dough: Overmixing will make the dough tough. Mix it just until it comes together.
  • Chill the dough: Chilling the dough will make it easier to work with and will help prevent the crust from shrinking in the oven.
  • Use a sharp knife to slice the apples: This will help prevent the apples from breaking apart.
  • Don't overcrowd the crostata: Leave some space between the apples so that they can cook evenly.
  • Brush the crust with egg wash before baking: This will help the crust brown and give it a nice shine.
  • Serve the crostata warm or at room temperature: It's delicious either way!

Conclusion:

Apple walnut crostata is a delicious and easy-to-make fall dessert. With its flaky crust, tender apples, and crunchy walnuts, it's sure to be a hit with everyone at your table. So next time you're looking for a sweet treat, give this recipe a try. You won't be disappointed!
