10 cups chopped romaine lettuce
1 cup diced swiss cheese
1 diced apple (leave the peel on)
1 diced peeled pear
1 cup cashews
1 1/2 cups dried cranberries
2 -3 tablespoons poppy seeds
1/2 cup sugar
1/3 cup cider vinegar
2 teaspoons lemon juice
2 tablespoons chopped onions
1/2 teaspoon salt
2/3 cup vegetable oil

Tips:

  • For a richer flavor, use dark caramel sauce. You can also make your own caramel sauce by heating 1 cup of sugar in a saucepan over medium heat until it turns amber in color. Then, slowly whisk in 1/2 cup of heavy cream and a pinch of salt.
  • If you don't have any pumpkin pie spice, you can make your own by combining 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of ground cloves.
  • To keep the cake moist, wrap it tightly in plastic wrap and store it in the refrigerator for up to 3 days. You can also freeze the cake for up to 2 months. To serve, thaw the cake overnight in the refrigerator or at room temperature for several hours.
  • To make the trifle ahead of time, assemble the layers and then cover the trifle with plastic wrap. Refrigerate the trifle for up to 24 hours before serving.
