Steps:

  • 1. In a medium bowl combine eggs and milk; stir in bread crumbs, onion, parsley, salt, sage, and pepper. Add ground meat; mix well. Lightly pat mixture into an 8x4x2-inch loaf pan. 2. Bake in a 350 degree F oven for 1 to 1-1/4 hours or until internal temperature registers 160 degrees F. Spoon off fat. In a bowl combine ketchup, sugar, and mustard; spread over meat. Bake for 10 minutes more. Let stand for 10 minutes before cutting into eight slices. 3. Makes 8 servings 4. Ham Loaf: Prepare as above, except use soft bread crumbs. Substitute 1/2 teaspoon dry mustard for the sage, basil, or oregano and omit the salt. Substitute 12 ounces lean ground beef or pork and 12 ounces ground cooked ham for the 1-1/2 pounds ground beef, lamb, or pork. Bake and let stand as above.

1 lb lean ground chuck
1 (6 ounce) box cornbread stuffing mix
1/2 cup red bell pepper
1/2 cup yellow bell pepper
1 cup yellow onion, diced
1/2 cup carrot, grated
1/2 cup celery, diced
2 tablespoons tomato paste
3 tablespoons steak sauce
1 egg
salt
pepper
1/4 cup knorr tomato soup mix
chili powder
garlic salt
cumin
1 cup French dressing
1/2 cup barbecue sauce
5 tablespoons louisiana hot sauce
1/4 cup unsweetened apple cider

Steps:

  • Mix all ingredients (except the last four) well and shape into a a loaf. Bake for 30 minutes on 400 degrees and then glaze with last four ingredients and bake 30 more and then slice and serve.

1-1/2 pounds lean ground beef or turkey
3/4 cup Quaker® Oats
3/4 cup finely chopped onion
1/2 cup catsup
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Heat oven to 350°F. Combine all ingredients in large bowl; mix lightly but thoroughly. Bake 50 to 55 minutes or until meatloaf is to medium doneness (160°F for beef, 170°F for turkey), until not pink in center and juices show no pink color. Let stand 5 minutes before slicing. As good as the meatloaf is, it would not be complete without the sauce. Mom formed the mixture into a loaf and placed it in the middle of a roast pan to cook. Twenty minutes before it was done, the grease/liquid was drained off. She then covered the meatloaf with 1/2 cup of grated onion, followed by 1 cup of (Heinz) ketchup mixed with 4T of brown sugar, 4T vinegar, 2T Worchestershire Sauce; heated mixed ingredients but did not boil. I always make a double batch to spoon over each piece. Cover and refrigerate leftovers promptly and use within 2 days, or wrap airtight and freeze up to 3 months.
