Time 1h

Yield 3 serving(s)

Number Of Ingredients 12

3 tablespoons cornstarch
1 1/2 tablespoons chili powder
1/4 teaspoon red pepper flakes
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/4 teaspoon dried ancho chile powder
3 russet potatoes, peeled
2 tablespoons olive oil
2 teaspoons Worcestershire sauce
2 tablespoons grill seasoning (store bought or Grill Seasoning)
1/2 cup shredded sharp cheddar cheese
1/4 cup green onion, sliced thin

Steps:

  • Place a rack in the center of the oven and preheat oven to 425 degrees. Line two baking sheets with parchment paper or aluminum foil and spray with nonstick cooking spray.
  • In a small bowl, whisk together cornstarch, chili powder, red pepper flakes, garlic powder, cumin and ancho chili powder. Set aside.
  • Rinse potatoes and peel with a vegetable peeler. You can leave some skin bits on the potatoes if you want to go for a more rustic fry. Using a sharp knife, slice a 1/4-inch piece off the potato lengthwise. The flat edge will give you a stable base to slice on. Rest the potato, cut side down, and slice potato into 1/4 to 3/8-inch planks.
  • Stack planks in piles 2 to 3 planks high, and slice lengthwise into 1/4 to 3/8-inch strips.
  • In a medium bowl, toss the potato strips with olive oil, Worcestershire sauce and grill seasoning. Sprinkle the cornstarch mixture over the potato slices and use tongs or forks to toss together, making sure that every potato is coated with a bit of cornstarch and seasoning.
  • Spread potatoes in a single layer across the prepared baking sheets. Bake for 30 to 40 minutes, removing the potatoes from the oven 2 or 3 times during baking to toss them together. Cook until potatoes are cooked through and brought to your desired crispiness. Remove from the oven, top with cheese and return to the oven for just a few minutes to melt the cheese. Remove and place onto a platter. Sprinkle with green onions and serve immediately.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

1 (10 ounce) package frozen french fries
4 ounces processed cheese, product (like Velveeta)
1 tablespoon milk
2 slices bacon or 2 slices vegetarian bacon, cooked
1 jalapeno
2 roma tomatoes
ranch dressing, to taste

Steps:

  • Prepare french fries according to package directions.
  • While fries are cooking, chop bacon, jalapeno, and tomatoes. Prepare the jalapeno according to your tastes - remove and discard seeds and ribs, if you prefer it less hot, or leave them in, if you like.
  • Combine cheese product and milk in a microwaveable container and follow package directions to melt in microwave, stirring occasionally during heating process.
  • When fries are ready, place on a serving platter and drizzle with the cheese sauce.
  • Sprinkle with the bacon, jalapeno and tomatoes.
  • Serve with ranch dressing.

Tips:

  • Choose the Right Potatoes: Select starchy potatoes like Russet or Idaho potatoes, known for their fluffy interiors and crispy exteriors when baked.
  • Cut Fries Evenly: Uniformly sized fries ensure even cooking. Use a sharp knife or a mandoline slicer for precise cuts.
  • Soak Fries in Cold Water: Soaking fries in cold water removes excess starch, resulting in crispier fries. Pat them dry thoroughly before baking.
  • Season Generously: Don't be shy with seasonings! A combination of salt, pepper, garlic powder, and paprika is a classic choice. Experiment with other herbs and spices to create your own unique flavor.
  • Use High-Quality Cheese: The quality of cheese directly impacts the taste of your baked cheese fries. Opt for a sharp cheddar cheese or a blend of cheeses for a rich and flavorful result.
  • Bake at High Temperature: High temperature is crucial for achieving crispy fries. Preheat your oven to the highest temperature it can reach (usually 450°F or higher) before baking.
  • Flip Fries Halfway Through: Flipping the fries halfway through baking ensures even browning and crispiness on all sides.
  • Don't Overcrowd the Pan: Avoid overcrowding the baking sheet. Spread the fries in a single layer for optimal air circulation and even cooking.
  • Use Parchment Paper: Lining the baking sheet with parchment paper prevents the fries from sticking and makes cleanup a breeze.
  • Serve Immediately: Baked cheese fries are best served immediately after baking, while they're hot and crispy. Leftovers can be reheated in the oven or air fryer.

Conclusion:

Baked cheese fries are an irresistible snack or side dish that can be enjoyed by people of all ages. With the right techniques and a bit of practice, you can easily master this recipe at home. Remember to choose the right potatoes, cut them evenly, soak them in cold water, season generously, use high-quality cheese, bake at high temperature, flip the fries halfway through, and avoid overcrowding the pan.
