Time 2h13m

Yield 6

Number Of Ingredients 11

1 cup water
½ cup uncooked white long-grain rice
2 beaten egg yolks
½ cup white sugar
1 tablespoon cornstarch
1 pinch salt
2 ½ cups milk
1 tablespoon fresh lemon juice
½ cup raisins
2 egg whites
¼ cup white sugar

Steps:

  • Place the water and rice into a saucepan, and bring to a boil over medium-high heat. Stir, and reduce heat to low. Cover pan, and simmer until all water is absorbed, about 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat the egg yolks together with 1/2 cup sugar in a mixing bowl. Add the cornstarch and salt. Continue beating, and gradually pour in the milk. Stir in the cooked rice, lemon juice, and raisins. Pour the rice mixture into a baking dish, and place inside a larger baking pan. Fill the larger pan with water to 1 inch up the sides of the dish containing the rice mixture.
  • Bake in preheated oven until the pudding is creamy and most of the liquid is absorbed, stirring occasionally. If necessary, add more water to maintain the water level.
  • Meanwhile, place the egg whites in a mixing bowl and beat until soft peaks form. Continue beating, and gradually add 1/4 cup sugar. Beat until stiff peaks form. Remove the pudding from the oven, leaving it in the larger baking dish. Top pudding with the meringue, swirling with a spoon to create soft peaks.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in preheated oven until the meringue is golden, 8 to 10 minutes. Serve warm.

QUEEN OF PUDDINGS - BAKED RASPBERRY AND MERINGUE PUDDING

Queen of Puddings - Baked Raspberry and Meringue Pudding image

This is probably one of the lightest and most mouth-watering puddings ever invented. This delightful old fashioned British "Pud" consists of layers of baked custard, raspberry jam and is finished with clouds of light, fluffy meringue - truly a Queen in the pudding world. It is a quintessential Nursery dessert, something that Nanny would rustle up for her young charges in the nursery. My mum would often make this for Sunday high tea, and we all loved it. I often use brioche crumbs for a richer custard base, but any white bread crumbs will be fine. There are numerous recipes for this classic dessert; this recipe is by James Martin, one of my favourite British chefs.

Time 55m

Yield 1 Queen of Puddings, 6-8 serving(s)

Number Of Ingredients 11

8 fluid ounces milk
8 fluid ounces double cream
1 vanilla pod, split
3 1/2 ounces caster sugar
5 free-range egg yolks
5 ounces fresh breadcrumbs
2 lemons, zest only
7 ounces raspberry jam
4 free-range egg whites
4 ounces caster sugar
1 tablespoon icing sugar, for dusting

Steps:

  • Preheat the oven to 160C/310F/Gas 2.
  • For the pudding base, pour the milk and cream into a pan and add the split vanilla pod. Bring slowly to the boil over a medium heat.
  • Place the sugar into a large bowl with the egg yolks and whisk until the mixture is light and creamy.
  • Slowly pour the egg mixture into the hot milk and cream, whisking all the time, then add the breadcrumbs and lemon zest.
  • Half-fill a roasting tin with boiling water to make a bain-marie. Pour the pudding mixture into individual ramekins, or one large oven-proof baking dish and place them into the bain-marie.
  • Place the bain-marie in the centre of the oven and bake for 10-15 minutes, or until the pudding or puddings are almost set, but still slightly wobbly in the centre.
  • Remove from the oven and allow to cool.
  • Increase the oven temperature to 190C/375F/Gas 5.
  • For the meringue topping, place the egg whites into a large clean bowl and whisk until stiff peaks form when the whisk is removed. Gradually whisk in the caster sugar, a tablespoonful at a time.
  • Place the jam into a small pan over a low heat and gently melt. Spread the jam over the top of the puddings, then cover the puddings completely with the meringue mixture.
  • Sprinkle with the icing sugar and bake for 10 to 15 minutes, or until the top is crisp and lightly browned.
  • To serve, remove from the oven and serve immediately.

BAKED MERINGUE APPLES

Baked Meringue Apples image

Meringue was piped into a dramatic topping for baked apples using a star-shaped pastry tip. Baked for a minute or two, it's still soft.

Number Of Ingredients 7

10 Cortland, Jonathan, or Granny Smith apples, (about 4 pounds)
1 lemon
1/4 cup sugar, plus 1 tablespoon for sprinkling
2 tablespoons unsalted butter
2 tablespoons brandy or cognac
1/2 recipe Swiss Meringue
Caramel Sauce for Baked Meringue Apples

Steps:

  • Core 6 apples by cutting a cone from the top of each with a paring knife. With a melon baller, scoop out seeds down to the bottom. Juice the lemon into cavity of each apple, and sprinkle each apple with 1/2 teaspoon sugar. Place 3 apples on a microwave-safe plate, and loosely cover with plastic wrap. Microwave on high power until the apples are translucent and cooked through but not caving in, about 3 1/2 to 4 minutes. Remove from the microwave, and repeat with another 3 apples. This cooking time will vary from oven to oven, so turn them occasionally, and check the window periodically. They will bubble up with juices when almost done.
  • Preheat the oven to 450 degrees. Peel, core, and slice the remaining 4 apples into 1/4-inch-thick wedges. In a large saucepan, melt butter over high heat. Add apple wedges, and toss to coat. Saute for about 1 minute, and sprinkle 1/4 cup sugar over the apple wedges. Saute, tossing often, until the apples are brown and translucent. Carefully add brandy (it may ignite), and toss again.
  • Transfer microwaved apples to a baking sheet, and stuff with the sauteed apples. Set aside in a warm place.
  • Fill a pastry bag fitted with Ateco No. 5 star or any other large star tip with meringue, and pipe out meringue onto each apple in decorative swirls. Place in oven, and bake until meringue just starts to brown, 1 to 2 minutes. Remove from oven, and serve warm with caramel sauce.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 13

1 egg white
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup sugar
4 tablespoons melted butter
2 cups pecan halves (1/2 pound)
1 teaspoon Dijon mustard
1/4 teaspoon sugar
1 tablespoon sherry wine vinegar
2 tablespoons olive oil
salt & freshly ground black pepper
2 cups arugula
6 cups mixed salad greens (radicchio, endive, escarole)

Steps:

  • PECANS.
  • Preheat the oven to 325. Butter a shallow 10 by 15 inch jelly roll pan.
  • Beat the egg white until stiff. Mix the cinnamon and salt into the sugar. Keeping the beater running, add the sugar mixture, 1 tablespoon at a time.
  • Fold in the melted butter and the pecans.
  • Spread the pecan mixture in the prepared pan and bake for 15 minutes.
  • Remove the pan from the oven. Using a spatula, carefully flip the pecan mixture one small section at a time. When all the pecans have been turned over, return the pan to the oven for an additional 15 minutes. Watch them carefully-do not allow them to burn.
  • Cool the pecans on paper towels.
  • (Only one cup of pecans is used in the preparation of the salad. The other cup can be eaten as a snack or frozen in a zippered plastic bag. These pecans also make a wonderful holiday gift).
  • SHERRY VINAIGRETTE.
  • Whisk together the mustard, sugar and vinegar. Whisking constantly, dribble in the olive oil. Add salt and pepper to taste.
  • SALAD.
  • Wash, dry and trim the arugala and other greens. Tear them into large bite size pieces. Just before serving, toss with the vinaigrette. Sprinkle 1 cup of the pecans over the top and toss again. Serve immediately.

Tips:

  • Use fresh egg whites. Older egg whites will not whip up as well and may result in a meringue that is not as stiff or glossy.
  • Make sure the egg whites are at room temperature. This will help them to whip up more easily.
  • Add sugar gradually. Adding the sugar all at once can cause the meringue to deflate.
  • Whip the meringue until it is stiff and glossy. This will take several minutes, so be patient.
  • Do not overbeat the meringue. Overbeaten meringue will be dry and crumbly.
  • Use meringue immediately. Meringue will start to lose its volume if it sits for too long.

Conclusion:

Meringue is a versatile ingredient that can be used to make a variety of delicious desserts. By following these tips, you can ensure that your meringue turns out perfect every time.
